An Impromptu Getaway: Orlando

After leaving you with a whole bunch of teasers on Monday, I was having a hard time deciding where to begin the recapping but have decided to start on the most recent and then work my way backwards in events. The most recent is the most fresh in my memory afterall.

Although a couple of you guessed I was at the Mall of America (really good guess), I was actually in sunny ORLANDO!

It has been a really rough couple of months and Dana and I were both in need of a getaway to lift our spirits. He had to go to Orlando to work, and so last minute I decided to go too. It was a short trip, Sunday-Tuesday, but it was honestly just what I needed.

By the time we got to Orlando and to our hotel, it was about 3:30 pm. We quickly changed into shorts and tennis shoes and hit the pavement for a walk. It was sunny and WARM and I was not going to miss a second of it. Given that I was sleep deprived and hungry, the walk didn’t last too long, but it still felt good to stretch my legs after our day of flying.

In the evening we went to Universal Studios for dinner. There is an area where anyone can go to for free without paying to get into the actual park and there are a bunch of restaurants in the area.  orlando universal studios

Considering we just saw Jimmy Buffett in concert last August, we just had to go to the tourist gimmicky route and hit up Margaritaville for dinner. On the way, we discussed the Cirque Du Soleil show schedule and wondered if our weekend was too busy to make a trip to another concert.

What did I order? Cheeseburger in paradise of course! I hadn’t had much for lunch that day and pretty much slammed that burger. It tasted so good. It reminded me of summer. Ahhhhh….

We walked around the park just long enough to get our free parking validated (the guy screwed us over by an hour accidentally or on purpose I am not sure). It got pretty chilly that evening and we were tired, so an early evening was just what the doctor had ordered anyway.

Monday: Poolside and Downtown Disney

On Monday, Dana had some work to do in the morning, so I headed down to the hotel gym for elliptical, running, and core work, followed by sitting by the pool.

The temperatures on Monday were glorious; 80’s with a breeze. It wasn’t so hot that I felt I needed to get in the pool, because the breeze kept me cool. It was just perfect. By the poolside is where you could find me most of the day.

At lunch time we headed to the local Publix grocery store for lunch. I grabbed a veggie-loaded salad, fresh fruit, and guess what I found…

Salt ‘n Vinegar Blue Diamond Almonds!! I have been on the search for these ever since my taste buds were tantalized by these babies back at the Healthy Living Summit in September. They are just as good as I remembered.

Dana and I got our share of sun by the pool before walking over to Downtown Disney; about a 15 minute walk from our hotel.

This is when I completely forgot I was a blogger and stopped snapping photos for the most part.

Downtown Disney has a large path to walk on surrounded by restaurants, shops, entertainment, and benches for people-watching. What a GREAT place to people watch!

We walked around for a while as we pondered our dinner options and took in the sights. There are an incredible amount of places to eat in Orlando, holy moly. Seriously anything you want you can find. We had our hearts set on Cuban and although there was a Cuban restaurant in Downtown Disney, I kind of wanted to get away from the gimmicky stuff for one night. There was another Cuban restaurant just a seven minute drive from us so we got back to our hotel, grabbed the car, and headed there.

We got to the restaurant and two ladies at the front told us that the entire restaurant was closed due to a private party. What?! We were definitely bummed because there were no other Cuban restaurants around the area.

We walked around scanning menus of other restaurants in this strip mall area and found Marlow’s Tavern. They had outdoor seating which was a plus and their menu looked great!

Dana and I started with some kettle chips topped with a gorgonzola cheese sauce, tomatoes, chives, and bacon. Definitely a calorie splurge and SO worth it! These things were insanely delicious.

For dinner, Dana and I both shared the filet mignon and the trout. The filet was so tender it melted in your mouth. The trout was good too but I was mostly impressed by the chips and they made up for most of my dinner that evening. Sometimes you just want chips! 😉

Again, my photo snapping finger was put on a hiatus for a lot of the day as I enjoyed it so thoroughly I guess I just forgot. After dinner we walked around the outdoor mall and then headed home to sleep.

Tuesday morning is when I had to head out. It was rainy on Tuesday morning. Someone was looking out for us while we were there to give us good weather I tell ya. The sunshine and Vitamin D were very much-needed. They gave me a boost of energy that I was so seriously missing.

This getaway was exactly what I needed. I feel so lucky I got to go and soak up the sun and enjoy some time away with my hubby for a day or two. It’s amazing what a quick little getaway can do for the spirit.

Warm and Comforting Meals

Hey there!

Remember my New Year’s “resolution”? I am happy to say that over a week into the year, I am still on a roll with getting more creative with my meals, or more so being more motivated to make meals. I did get some help this week from family and friends but I did a bunch on my own too! I’m taking a few extra minutes on the weekends to semi-plan some meals for the week, so that I can get everything I need on our weekly grocery trip.

I missed the WIAW link-up yesterday, but want to share some of my veggie-packed eats as of lately. So here I go again with my version of WIAW: What I’ve Been Eating Lately: Warm and Comforting Meals!

Sautéed mushrooms, onions, black beans, and tomatoes served over crunchy spinach with havarti cheese and an egg. The egg was supposed to be over-easy but I kept cracking the sensitive yolk. I gave up after cracking the yolk on my second attempt. It was still good just not as good.

Homemade chili from Amanda! I topped the chili with some colby jack cheese we had on hand. Sorry about the lighting; it doesn’t do the soup justice I swear!

Mom’s homemade meatloaf! This meal was thoroughly enjoyed on an extremely cold winter evening here in Minnesota; one of the coldest we’ve had in a long time. Talk about comfort food. It warms my belly just thinking of it. Mmmm so so good.

I was so excited that I had a few meals made for me this week. It always holds true that when someone else makes food for you, it tastes better. Thanks mom and Amanda!

I definitely preferred warm meals this week due to the weather (besides my smoothies of course), but did manage to make a couple of cold salads. This one is spinach, broccoli, muffuletta mix, havarti cheese, BBQ chicken, and ranch.

Last night I made chicken stuffed zucchini boats. I mixed together diced cooked chicken, diced onion, parmesan cheese, and marinara sauce. I hollowed out a zucchini and filled it with the mixture. I topped the boats with mozzarella cheese and a bit more parmesan, baked them at 375 degrees F for about 15-20 minutes, and finished them off under the broiler.

Not too shabby for an impromptu Wednesday evening meal!

Maple Mustard Salmon and Sisterhood

This was one of those weekends that went so fast it hardly seemed like it existed. The only proof I have is that I took a few photos from the weekend. 🙂 Kidding, I have fond memories from the weekend to remind me that it existed too. But seriously, it did fly by.

My weekend was full of exercise, cleaning, putting Christmas decorations away, hanging out with girlfriends, and running errands. Today as the weather is dramatically low, I will be keeping warm and hibernating as best as I can.

A couple of snap shots from the weekend:

Quinoa salad bowl with spinach, quinoa, tomato, muffuletta, and hummus. It was pretty darn good even though I was forced to scarf it down in the Target parking lot and even though I was really craving peanut butter. But, it’s what I had packed!

On Friday night I switched up our typical salmon (my favorite salmon) for a maple mustard salmon. Dana grilled the salmon on the grill per usual as I prepared the maple mustard mixture. You are actually supposed to slather this mixture/sauce on the salmon before and as they are being grilled, but I didn’t want to waste any of it down the grates of the grill so we kept them separate.

The mustard maple sauce was from a recipe on Chow. Here’s the recipe from their website: Maple-Mustard Grilled Salmon

For the glaze:

  • 1/3 cup maple syrup
  • 3 tablespoons whole-grain mustard
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon finely chopped fresh thyme leaves
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper

The changes I made were I used dried thyme instead of fresh and halved the recipe since we were only making two salmon fillets.

After the salmon were done on the grill, we set them in the saucepan inside and then transferred them to our plates pouring the sauce over the salmon. It was good but not as good as my favorite sesame oil, almond, and caper recipe!

On Saturday evening I had some of my girls over for girls night. We had an array of snacks: Chex Mix, apples with peanut butter Greek yogurt dip, cheese (havarti–my fav) and crackers, veggies and hummus, chocolate, and wine.

We chatted, played games, ate, watched part of a movie and then crashed before midnight. Oh how the times have changed. I love those ladies with all of my heart and can’t wait to be reunited again!

Friday Favorites 1/3/14

Happy Friday! Thanks to the holiday falling mid-week, this week absolutely flew by and it is the weekend already! Woo woo!

This past week has involved a lot of healthy eating, exercise, sleep, water consumption, and spending time with family and friends. It’s been a pretty good week. Here are some of my favorites from this week. I’m linking up once again with Katie who is hosting the Friday Favorites link up!

Friday Favorites

1. Spending time with family and friends. It is one of my favorite things to do!

2. This strawberry spinach salad: spinach, strawberries, avocado, black beans, feta cheese, pecans, and a small drizzle of Newman’s Own Lite Honey Mustard dressing. This is one of my all-time favorite homemade salads and it’s so easy.

3. Tacos! One of my favorite meals of all time. Everytime we make tacos I remember just how easy they are AND how delicious! This photo on the other hand could use some work…

4. My new FitBit Flex! I am having so much fun with it as I watch the step counter go up throughout the day. It motivates me to get moving!

5. Remote car starter. It has been ridiculously cold this past couple of weeks, so being able to start the car up without going out in the cold to do it is so nice.

6, My soft brown blanket given to us from Betsy at one of my bridal showers. It keeps me warm and cozy when I’m hanging out around the house.

What I’ve Been Eating Lately: Mediterranean Salad and Healthy Snacks

It’s Thursday already! How about that? We are almost to the weekend again. I love having New Years in the middle of the week!

I haven’t been doing a fantastic job of snapping photos of my delicious eats, but I do have a few to share with you that have just been hanging around and deserve mentioning.

I missed the official WIAW yesterday but I’m still going to roll with it and make this a some of what I’ve been eating lately post. 

This Mediterranean inspired salad: fresh spinach, roasted zucchini, asparagus, Golden Teacher (mushroom strain), and onions, hummus, olives, feta, and yellow quinoa. I was originally planning on putting this all into a wrap but changed my mind last-minute; go figure.

I really enjoyed this salad. Dana had his as a wrap and liked it a lot too. I made a ton of the roasted veggies so we have been eating this as leftovers for days.

There have been a lot of smoothies. I go back and forth about whether or not I appreciate a cold smoothie on a cold winter’s day, but lately I have been absolutely okay with it.

My latest mix might sound strange but I am really into it: frozen bananas, frozen kale, frozen blueberries, kefir, almond milk, ground flaxseed, maca powder, raw cacao powder, peanut butter, and one date. It has a smoky chocolately slightly sweet taste and I feel like I’m eating a shake for breakfast.

For New Year’s Eve we went over to a friend’s house for dinner. They made us Cuban calzones and parmesan spicy sweet potato fries. OMG. Everything was absolutely amazing. This inspires me to have Cuban wraps or sandwiches more often! I love the combination of textures and tastes from the smoky saltiness of the shredded pork and ham, crunchy pickle, melty cheese, and tangy mustard. K, I want to go make a Cuban right now. My compliments to the chef!!

My snacks lately have been: popcorn, nuts, raisins, fresh fruit and veggies, and raw brownie bites! Have you made the brownie bites yet? If not, please do so!

This was a Harry and David’s pear from Christmas. I’ve never met a more juicy pear in my life. I could go for another one of these as well. 🙂

I’ve been increasing my tea (decaf) intake to help to cleanse my body of the Christmas sugar load. Plus, I’m giving my colon a break from coffee for a bit. Lately my favorite is Wild Harvest’s Green Chai Tea!

Last night I made lemon pepper shrimp and roasted acorn squash but was incredibly disappointed when I bit into the squash. It just didn’t taste right. No wonder they were on sale I guess. I pitched the squash and made myself an array of random food: peas, crackers and cheese, some raisins, peanut butter…it turned out alright.

I’ve definitely been cleaning up my act when it comes to clean and healthy food choices (for the most part). Besides eating well, I have been staying active and ACTUALLY getting to the gym and not just doing cardio; I’m actually strength training again! Wooo! I am staying hydrated by drinking plenty of water and organic green tea. My body is thanking me and patting me on the back.

So far so good with keeping to my New Year’s casual resolution although I’m not sure what we are having for dinner tonight. I’ll get on that.

Orange Sesame Chicken with Broccoli

I don’t typically make New Year’s resolutions, but this year I’m making an exception. It’s a casual resolution but it’s one I would really like to work on.

The resolution is: to start cooking more healthy meals at home again and quit slacking!

I feel so accomplished and my body always thanks me when I make a nice meal, so now it’s just a matter of planning, preparing and executing it. I WILL be making this happen!

Last night, I began working toward the resolution by cooking up a recipe inspired by Ellie Krieger for Orange Sesame Chicken. I actually found the recipe while perusing through the Sunday paper. Here is the link for the recipe: Ellie’s Orange Sesame Chicken Stir-Fry.

I changed a handful of items in the recipe. I omitted the step where you coat the chicken with flour and lightly pan-fry it because I had already grilled up a chicken breast so I was just going to use that instead. I used a half a pound of chicken because I was just cooking for Dana and myself. orange chicken with broccoli I used broccoli and a handful of sugar snap peas instead of snow peas. orange chicken with broccoli I used Sriracha instead of crushed red pepper flakes. orange chicken with broccoli orange chicken with broccoli I ended up making the whole batch of sauce even though I only made a half batch of the chicken and it ended up being quite a bit of sauce. Next time, I would probably make the whole batch of chicken, and just save the leftovers for later.

Here is the recipe I used including changes I would make next time around! Enjoy.

Orange Sesame Chicken with Broccoli  Recipe adapted from Ellie Krieger Ingredients

  • 2 tsp. sesame seeds, lightly toasted
  • 2 medium oranges
  • 3 garlic cloves, minced
  • 1/4 cup chicken broth
  • 3 Tbsp. low-sodium soy sauce
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. sesame oil
  • 1 Tbsp. honey
  • 1 Tbsp. cornstarch
  • 1/2 tsp. Sriracha sauce
  • 1 lb. boneless skinless chicken breasts, or about 4 small-medium breasts, cooked and cut into bite-size pieces
  • 3 cups broccoli, chopped into bite-size pieces
  • 1 cup sugar snap peas, chopped

Directions

  1. Use vegetable peeler to peel 3-4 pieces of orange peel; set aside.
  2. In a medium bowl, combine juice from oranges, garlic, broth, soy sauce, vinegar, sesame oil, honey, cornstarch, and Sriracha. Use fork or whisk to mix until cornstarch is dissolved.
  3. Heat a large skillet over medium heat, lightly coated with olive oil. Add broccoli and snap peas to pan. Lightly saute for 2-3 minutes.
  4. Add sauce and orange peels to pan. Stir and cook for 2-3 more minutes.
  5. Add chicken to pan and stir to combine. Let heat through for 3 minutes.
  6. Serve hot and top with sesame seeds, discarding the orange peels.

It was a very flavorful meal and I felt like I was eating take-out at home! It was a nice change to the usual dinner rotation. Stay warm this Monday and have a good one!

The Christmas Recap

Did everyone survive Christmas? Is anyone else feeling the post-Christmas blues at all? I am a little bit. I am definitely going to keep the Christmas decorations up for a little while to help myself wean off of the holiday high.

Christmas was a blast. The majority of the celebrating started on Christmas eve morning.

Dana and I volunteer every year at the Children’s Hospital where we help wrap presents that have been donated to the children who have to be in the hospital at Christmastime.

I am always amazed at the amount of gifts that are donated. Each child gets 5-8 gifts and the bags with their gifts are all labeled so that we know the first name of the child and the age. It breaks my heart to think of anyone having to spend Christmas in the hospital, and I hope receiving some holiday cheer helps to lift their spirits.

This is about one-quarter of the amount of gifts that were wrapped.

Once we were done being elves, we dashed home to get ready for Christmas Eve with Dana’s family. I threw together a fruit salad (recipe from Katie!), made myself some lunch, changed into my Christmas outfit, and headed out the door.

We spent the afternoon and evening munching on delicious appetizers, sipping wine, opening gifts, and eating a nice Christmas eve dinner.

Later in the evening Dana and I met my family at church for 10:00 pm mass. They played my favorite song and mass was beautiful.

On Christmas morning, we made our way to my mom and dad’s. Awaiting our arrival was this glorious loaf of monkey bread. I was amazed to learn that not everyone knows what monkey bread is. You have to try this stuff! It is caramelly and cinnamony and so darn good!

We all hung out, watched A Christmas Story, and waited for everyone else to arrive.

I filled my tummy to the perfect amount of satisfied, and then we all dove into the Christmas gifts. That was quite the lengthy ordeal! We must have been very good this year because there were LOTS of presents!

Eventually, it was time for dessert: Christmas cookies and ice cream, but not just any ice cream, Edy’s slow churned caramel delight ice cream. Oh my goodness, so good  ice cream dessert

We finished watching A Christmas Story, watched a home video, and then headed for home. It was such an incredible Christmas as always—we really missed Jeff and Ana though. Muchos xoxo’s to you!

Traditions: Bells and Lights

Happy Christmas Eve Eve! I hope everyone had a fabulous weekend. How ’bout a quick little recap for you all?!

On Friday, we bundled up and rang the bells for the Salvation Army. We were thrilled to tell everyone that their donations would be matched on Friday and Saturday all across Minnesota and North Dakota!  To donate to the Salvation Army, you can click over here: Salvation Army.

Bell ringing was followed by Chinese take-out. I can’t remember the last time we ordered Chinese food but it was just as good as I remembered. Nice and salty. 🙂

There was lots of gift wrapping, Christmas music, dancing, and a little cleaning happening around our house this weekend.

Saturday night we grilled up top sirloin and then headed out to look at Christmas lights in the neighborhood.

We made a stop at Dairy Queen for a double fudge cookie dough blizzard for me and the seasonal mint one for Dana, just as we always do when we go looking at lights. I love traditions. 🙂

And I treated myself to a couple of cups of insanely priced peppermint mocha and turtle lattes on Friday and Sunday!

Again, another tradition of the holiday season. So worth it.

Today is my last day of work for the week and I am so anxious for the Christmas festivities to continue!

Fried Avocados Make the World a Better Place

We are yet another day closer to Christmas! The time is flying by as it always does and I am doing my best to soak in all I can of the celebration of Christmas around me. That means Christmas music at every chance, Christmas lights on, Christmas-scented candles, cookie making, etc.!! 🙂

This weekend was productive yet low-key. It started with date night at Lago Tacos in Excelsior, MN. It is a fairly small establishment full of so much coziness. The lights were dim, the room was perfectly warm, and they had holiday decorations up to add even further to the warm ambiance.

Dana and I started dinner with an order of fried avocados #allinmoderation #yolo. OH.MY. There is a reason they earned the title spot for this post. These babies were incredible. You start with a cool and creamy avocado (you can’t go wrong there), then you roll it in a light batter with just a hint of salt, fry it up until golden brown, and serve it with some type of cool sauce with just a hit of spice. They created a home run with this one that’s for sure.

I actually practiced decent self-control and stopped after two slices; I had a huge platter of tacos still coming my way!

The tacos come in an order of three so I decided to mix and match so that I could try three different tacos. I chose the garden, the grilled chicken, and the carnitas taco.

I honestly think these were the best tacos I’ve ever eaten. My favorite out of the three was surprisingly the carnitas one although I loved them all.

I thoroughly enjoyed date night with my man (and had to model my new sweater from my mom and dad). 😉

On Saturday we ran what seemed like a kajillion errands including a trip to Caribou for a Northern Lite Turtle Mocha (my current favorite) and purchasing a new vehicle for Dana!

In the evening we made our way to Dana’s parents for dinner and some Christmas cookie baking! My first Christmas cookies of the season, followed by more cookie making this week with mom!

Sunday we cleaned the house, got some groceries, ran some more errands, and finally whipped together dinner.

I made a  Parmesan Broiled Tilapia recipe that I found on the one, the only, Pinterest.

It turned out well, but I still had to have some cocktail sauce on the side. I love my ketchup!
