Birthday Bash at Comedy Sports

I don’t know about you guys but I had a pretty great Friday. Not only was it the best day of the week but I also got to celebrate my Betsy’s birthday. Last year we went to Betsy’s place and hung out, played games, and I made these insanely amazing Oreo Bars. This year we celebrated at Comedy Sports in Calhoun Square in Minneapolis.

Before I get into that, one brief back track. For dinner I made meatloaf burgers.

I mixed lean ground turkey with chopped olives, onion, a dash of garlic powder, and cracked black pepper. I formed them into patties and cooked them on the stove top. I topped mine with mozzarella cheese and served it with sautéed mushrooms. Delicious.

Okay, now back to the birthday celebration. We met the birthday group at Republic Bar in Calhoun Square. As someone who doesn’t visit that area very often I have to say I was blown away at how nice it was. Not only Calhoun Square, but Republic as well. I felt like I was in Chicago or New York. I loved the feeling of it.

Right across the hallway from the Republic was Comedy Sports. So after a little mingling and libations, we headed across the hall.

Comedy Sports is an improvisational comedy show played like a game. There are two teams of three comedians who compete for the most laughs. There is a referee who calls the shots, names the games, and interacts with the audience taking suggestions for objects in the skits. If you’ve ever seen ‘Whose Line is it Anyway?’, then you know exactly what I’m talking about.

I was fascinated by the quick wits of these comedians. There are given a topic and within seconds are asked to perform it. My brain does not work like that at all. It takes me a little while to conjure my thoughts. I guess that’s why I’m not an improv comedian or a politician or a lawyer, among others. 🙂

I thought the show was very funny. I thought they would pick on the birthday girl but they didn’t, and I think she was more than happy about that. Tickets were only $12, actually $11 because we got a group discount. I think that’s quite the deal when you consider that is pretty much the same as going to a movie. Right? I haven’t been to a movie in a good year or two but last I remember it was $10 or so. It is a great way to spend a Friday evening.

I can’t decide though if I enjoy improv comedy or stand-up comedy like we saw at the Joke Joint more. They both make me laugh which is a healthy wonderful thing.

I had so much fun celebrating last night with my little snarky. I love that lovely lady more than I could ever say.

Peanut Chicken Salad

 Is anyone else doing their Friday happy dance?! HAPPY FRIDAY my friends! strong

So guess what? Yesterday, I did it again. No peanut butter for breakfast! That’s because I was saving myself for dinner but more on that in a sec. I should also mention I did have banana with pb for breakfast on Wednesday. I am trying to scale back just a little bit for real.

But yesterday I had another Greek yogurt bowl that I had put together and refrigerated the night before.

For lunch I had carrots, cucumber, a banana, and a nice big salad with tomatoes, black beans, olives, feta cheese, and hummus.

I made a quick stop at the gym on the way home from work and then had a sweet and juicy snack once I got home…

Then I got ready for dinner. We had our friends Adam and Stacy over for dinner last night and on the menu: Oriental Peanut Chicken; recipe courtesy of Dana’s mom.

We switched it up slightly and used quinoa instead of rice.

We sautéed two chicken breasts, broccoli, onion, carrots, and mushrooms…

Next we drizzled the sautéed chicken and veggies with homemade peanut sauce and gave it a good stir. This is why I saved my peanut butter consumption for dinner time. This sauce is gold it is so delicious. I may have to ask my mother-in-law if I can divulge the recipe to you all. 🙂

And lastly to put it together: one heaping layer of romaine lettuce chopped into shreds onto a large serving platter, next layer on the quinoa, then the sautéed veggies and chicken, and finally top with fresh chopped cucumbers.

!!!! It was so good!!! Our company was pretty great too! 😉 We had such a fun time with them as always. I get an extra wrinkle line each time we hang out from laughing so much.

I hope you all had a great week and are looking forward to the weekend as much as I am. I am off to an appointment, then work, and tonight we are celebrating Betsy’s birthday! We don’t have too much planned for the weekend but one thing I know for sure is the rest of the Christmas stuff is coming down (our wreaths are still up–whoops) and the few Valentine’s Day decorations that I do have are going up! Woooo!

Surround Yourself with Positive People


Can I get a “whoop whoop” for Saturday?! It was so nice not waking up to an alarm clock this morning (sigh). I am feelin’ completely rested and ready to go.

I had a fantastic day yesterday. In the morning I had an appointment and then made my way to the gym for a quick sweat sesh. Then off I went to meet up with my friend Courtney at Whole Foods.

Courtney and I were both completed our Dietetic Internships at Viterbo University in La Crosse, WI. When we were first accepted into the program, we were sent a list of information of all the other interns. Ironically, Courtney lived about 15 minutes from my parent’s place. We met up one time before we moved out to Wisconsin so that we could both have the comfort of knowing at least one person out there. We had the immediate bond of being “Twin City Girls.”

Throughout the 11 month internship, our friendship continued to grow. We shared many emotions together and many memories both good and bad. Courtney was my saving grace when I was running a 105°F fever. She picked me up in no time and rushed me to the Urgent Care without hesitation.

We related on so many levels; both having such love for our families and being home. We struggled through the emotions of being away from home and the stress of the internship. We both traveled home quite a bit on the weekends. We shared our dreams, studied vocab terms, and sang at the top of our lungs as we carpooled home.

I don’t know what I would have done if she hadn’t been there. We got through it together and grew as individuals on so many levels throughout the process.

I am so lucky to have her in my life. She is one of the most positive, genuine, selfless people I know. One of my unofficial new year resolutions is to surround myself with more people like her. People who look for the good in others, who imagine positive outcomes, and pour their hearts out for those they love. These are the people that make the world a better place.

We will continue to follow our hearts and reach for our dreams.

I don’t know how to transition into food smoothly after that, so I’m just going to go for it. Lunch was from the Whole Foods salad bar which is a glimpse of heaven for me. The veggie packed salad bars basically having me drooling just thinking about them.

 I tempted myself by walking through the frozen treats aisle. I mean seriously they have everything I could ever want: Coconut Bliss, Frozen Kefir, Soy Ice Cream…I wanted to try them all! Can you believe I walked out of there without purchasing one? That’s because I forgot.  whole foods
 In the afternoon I completed another session of the 30 Day Abs Challenge. Here is what week 2 workout looks like:

For dinner I headed over to my brother Kevin’s place for spaghetti with mom and dad.
 I had a gluten-free version with spaghetti squash. The sauce was amazing; full of italian sausage, ground turkey, veggies….YUM. Mom also made her Italian salad which tops Olive Garden salad if you ask me.
SO stinkin’ good and so nice to be with my beautiful fam bam, who are also such positive, genuine, beautiful people.
Being that I forgot to buy a frozen treat for Dana and myself at Whole Foods, I thought it would be a good idea to stop by Cherry Berry on the way home to fulfill my frozen yogurt wishes.
I went easy on the toppings (for once). I chose the non-fat vanilla yogurt with marshmallow sauce, sprinkles, and one mini Reese’s peanut butter cup.

It was a delicious, warm-hearted, lovely day. I can’t wait to make today just the same. Embrace the day. Spread the love. Surround yourself with positive people. Xoxo.

A Reminiscent Run

Yesterday was an all-around great day. The day began with a relaxing cup of coffee and banana with peanut butter for breakfast. I suppose I could say I am officially in a “rut” with the pb banana. I haven’t changed up breakfast for a good 1-2 weeks now, but I do still love my pb and b!

Mid-morning I swung by Trader Joe’s to pick up a couple of goodies as well as Macy’s in search of a swimsuit for Turks and Caicos. It’s not that I necessarily need another swimsuit it’s just that I would really enjoy another one. I wanted to look at Macy’s because I still have birthday money there and that would have worked out perfectly, but they didn’t have too many options yet. I did find one on Victoria’s Secret website that I like, but I haven’t been able to commit yet. We shall see.

For lunch I met up with my dear friend Kalley at People’s Organic Cafe per Kalley’s recommendation.

Just as I had suspected, the menu was stellar, stacked with healthy and veggieful dishes. I was in my element. She knows me well!

I went with the “Really Greek” salad: organic romaine, roasted tomatoes, quinoa tabouli, marinated chickpeas, cucumber, olives, feta and lemon basil dressing.

It was a really good decision (ha-ha). I loved every bit of it.

My lunch with Kal flew by all too quickly. I had so much fun catching up on life, reminiscing a bit about the past, and realizing how far I have come with this beautiful lady; about 13 years! I can’t wait to see her again.

I would highly recommend People’s Organic to anybody who enjoys fresh organic, healthy food. It is slightly pricey but that is only because everything is organic. I promise you it is totally worth it. Besides salads they also have sandwiches, wraps, soup, and amazing looking desserts.

I dressed in my running gear at lunch for a reason…after lunch I had plans to run the streets of the neighborhood where I grew up. I was in dire need of a change of scenery and the last time I ran this neighborhood was last late winter perhaps (?), so I thought it would be a welcomed route.

It wasn’t my easiest run but it sure was a fun one. I reminisced the entire time. Every new street I ran by literally brought back so many memories.

I passed by my old house, Betsy’s family’s old house which was just a block away (which explains my closeness to the family as I was there all.the.time.), and about 5 houses of families I babysat for.

I ran on the sidewalk where I would always tell my mom I was thirsty towards the end of our walks. She would tell me to think of biting into a lemon because it makes your mouth salivate and that would be enough to get me home. I remembered our many walks together; reciting state capitals, showing her my new dance steps, singing songs, we have so many wonderful memories.

I passed by “the elephant tree” named because it clearly looks like an elephant. 😉

I passed by the “picnic tree” where Steph, Betsy, our friend Katie, and I would pack lunches and bike to eat lunch under our favorite tree.

I passed the ice rink where I spent many winters learning to ice skate…

ice rinkEvery single step of this run was literally a run down memory lane. Aside from the fact that it wasn’t my “best” run physically, it was sure a great mental run!

Once I got home, we took Moose to the dog park to let him socialize with some buddies. He was in quite the “loving” mood. We had to keep a close eye on him. If you ever are in need of a good chuckle, go to a dog park. Watching the dogs interact is one of the funniest things.

After the dog park I completed my third session of the Abs Challenge. We are now on to week 2!

Dinner was a favorite of ours: veggie hash with a runny egg on top. I pulled whatever we had in the fridge/freezer which included broccoli, mushrooms, onion, leftover Santa Fe roll filler, bell peppers, and then topped the sautéed veggies with shredded cheese, tomato, cilantro, and an over-easy egg. Perfection.

We brought out the snorkel gear last night to make sure everything still fit and was ready to go for our vacation. I feel like it is a lot sooner than the end of February based on my excitement level but considering how time flies, it will be here before we know it.

I am in the process of working on a meal plan for the week since we will be doing our own cooking in our kitchen. Once I get that set up I will share with you all!

A Healthy Start to 2013: Polar Dash 10K

I am very excited to recap on my run from yesterday so I am not wasting any time today.

New Year’s Day (yesterday) I got up bright and early to eat my usual banana and peanut butter pre-run breakfast and sip on a half a cup of coffee. I laid out all of my running gear the night before like I always do, I even pinned my number on my shirt and tied in my time chip to my shoe.

My nerves took over temporarily while thinking about the frigid temperatures, and I started to second guess if I had the right amount of clothes and layers on. On the ride over the thermometer read -7°F. The last long run we did outside it was 9°F outside. That’s a big difference! Dana reassured me that what I had on would be just fine and eventually I came to the realization that yes, I would be fine.

We picked up my brother Kevin and his friend Jeremy (who ran the half-marathon with us in June) and drove to St. Paul. We parked and took the shuttle over to the starting area.

We all did the bathroom thing then headed over to the starting line. At this point the temperature had probably crept up to a whopping -4°F. You had to keep moving to keep the circulation flowing so everyone was jumping, running in place, stretching, and trying to stay warm. This was the hardest part of the whole race for me. From the time it took for us to leave our car in the lot and head to the starting line was about 25 minutes, and my toes were just not having it. They were starting to go numb. All I wanted to do was start running! I have never wanted to start running so bad!

Once the race began and our wave took off, the toes were still feeling pretty immobile, but at about mile 2 they were feeling fine. I ran next to Dana, Kevin, and Jeremy the whole race (minus the very end when K and J took off) which made it so much fun. Jeremy wore an afro wig and crazy 80’s shorts with a fanny pack and got all the runners pumped up and was highly entertaining. One girl even came up to him after the race and told him she was keeping an eye on his afro the whole race and PR’ed because of it!

Another form of entertainment was seeing all of the runner’s iced over faces. It was especially hysterical when men had big beards because the ice completely forms around the beard and turns it white. We all looked like we should have been in some sort of Christmas movie.

Between the entertainment and running with the three boys and keeping each other company, the race flew by. Even though the temperature was sickly cold, there was no wind so the run actually didn’t feel too cold. Dana was right, I had worn the perfect amount of clothes and layers. It’s the same thing I wore on this training run except I wore a wicking  thermal insulated head band instead of a hat.

I felt like it was one of my easiest races actually (albeit not one of my fastest). I finished the run in 1 hour and 37 seconds. I was hoping to get an hour or less, but that’s alright. I’ll blame it on the very slow first mile due to a large mob of runners. 🙂 I am still just very proud I finished a race in sub zero temperatures.

This was definitely one of the most fun races I have done too. I couldn’t believe all of the die hard Minnesotans who were out there running and out there cheering for the runners! I am so proud of my state.

Post-race the wonderful volunteers were handing out waters, goodies bags with bananas, salted nut rolls, and chips, and best of all HOT CHOCOLATE! I don’t mean any ordinary hot chocolate, this was like super chocolatey totally awesome hot chocolate. It tasted like heaven in my mouth. What a fun way to end the race!

A little different from our group picture post half-marathon in June. Ha ha!

Besides the 10K, there was also a half-marathon and a 5K. The Polar Dash was put on by Team Ortho. I have raved about their races and the organization of the races in the past, and this one gets the same credit. The volunteers are so friendly, there is never a moment when you are unsure of where you need to be, they are right there for you if you need them, and they help you have fun and enjoy your races.

The Polar Dash race on January 1st was the perfect way to kick off a healthy new year! I felt fabulous!

We were all very excited to warm up and “thaw” in the car ride home.

Immediately after walking in our front door I turned the heat up and hopped in a hot shower. I got into my coziest fleece pants and plopped myself on the couch for the majority of the day. I think the combination of the cold run and my body working hard to regulate my body temperature coupled with the fact that I slept terribly the night before set me up for a super drowsy day.

I did manage to dress the pup up in Polar Dash gear. It’s always good for a laugh or two. What a good sport.

I was extremely hungry for lunch but had no ambition to make anything, so I snacked on some freeze dried salted edamame for some quick fuel and protein. These babies pack 12 grams of protein in a half a cup. They aren’t out-of-this-world fantastic tasting, but I do enjoy them and they are a healthy snack, and especially a good snack to pack if traveling.

Eventually I rounded up enough energy to make myself a healthy salad. It’s nothing you haven’t seen before but it did taste pretty darn good.

A kajillion snacks happened in the afternoon. I had a bottomless pit of a stomach yesterday. I snacked on almonds, craisins, carrots, a banana, almond crackers, peanut butter. My appetite was insane.

Once dinner rolled around we were both still feeling pretty unmotivated, so we opted for easy. I found a can of refried beans in the cupboard, heated them up with some Parkers Farm salsa. I topped the beans on corn tortillas with shredded cheese, corn, tomatoes, cilantro, and some more salsa.

So simple and so delicious.

I did manage to prepare a meal for the crock pot that will be cooking all day today. I hope it turns out! I’ll let you know.

Hibachi and Feeling Festive

Merry Christmas Eve Eve! How is everyone’s weekend shaping up?

So, yesterday morning Dana and I geared up for our 6.5 mile run as part of our 10K training plan. Let’s just say my body didn’t quite understand what it was supposed to do with the 9°F weather. Clothing-wise I felt I dressed perfectly, but my muscles and actual body functions weren’t quite up to speed.

My running strides had to be so concise and almost “tight” because of the ice and snow on the sidewalks, and my legs literally felt like bricks moving up the hills. My lungs felt like they had never run before either. It was not the prettiest or most comfortable run for me at all, BUT we did finish and it was great prep for our actual 10K on January 1st.

I ate a big bite of peanut butter post-race to refuel for a short bit while we ran a couple of errands, then it was home for lunch:

In the evening we met up with our dear friends Kate and Luke for a Hibachi dinner at Mount Fuji. They are home from Atlanta for the holidays and I was SO excited to see them!

Now I am off to cut coupons, go grocery shopping (it’s going to be madness at the store), and get ready for a family Christmas party!

10K Training Plan & Other Fitness Challenges

Hello world! The weekend came and went as fast as I can say Happy Holidays. The holidays are now in full swing. We had an annual holiday party with our friends on Saturday which was a blast. I gave the camera a rest for the night however so you’ll just have to take my word that it was a great party full of lots of laughs, great food, and great friends.

The last time we caught up was on Friday, so it’s time to play catch up from Friday night, Saturday and Sunday. So here we go!

Friday Night

On Friday we went over to my mom and dad’s (and Kev too) to watch our wedding video with them. We laughed, some of us teared up, and really enjoyed reliving the memories of our wedding day together.

Mom made us gluten-free spaghetti noodles with red sauce that had italian sausage, mushrooms, onions and spinach. It tasted SO good and I could not tell the difference in taste or texture between gluten-free and ordinary pasta. We also had a side salad—can’t forget about the greens!

Saturday

I had my standard pre-run breakfast of banana and peanut butter before Dana, Moose, and I hit the road for a 3.5 mile run.

The training plan for our 10K on January 1st is such:

  • Mon: cross-training and/or strength train
  • Tues: 3 mile run
  • Wed: cross-train and/or strength
  • Thurs: 2 mile run
  • Fri: rest or cross-train
  • Sat: week 1—3.5 mile run; week 2—4.5 mile; week 3—5.5 mile; week 4—6.6 mile; rest or short run; then the 10K!
  • Sun: rest or cross-train

The weather has been pretty unpredictable around here. On Saturday morning the temperature was around mid to upper 30’s and now this morning the thermometer says it’s 49º F outside! It’s supposed to drop down again later in the week but I am loving the warm for as long as I can get it.

After our run we made a stop at Caribou Coffee for their BOGO 20¢ deal. We treated ourselves to the Light Salted Caramel Dark Chocolate Mocha. That was the same one I got in Atlanta and once again, it was like taking a bite of dessert each time I took a sip. Amazing.

We continued our journey over to Minneapolis to pick-up our bibs and race gear for the 10K for early packet pickup.

We even got to meet a local meteorologist, Ken Barlow, who was volunteering at the pick up! As you can see in the photo I was a tad bit excited about it.

Once we arrived home I made myself a simple fall salad with mixed greens, pear, feta cheese, walnuts, and poppy-seed dressing.

After some food prep, and errands, we said good-bye to the pooch and headed out to the holiday party for the evening.

Sunday

Brunch: sautéed onion with chili beans topped with cheese, a runny egg, tomatoes, and avocado. Outstanding.

Next on the agenda was flipping through the Sunday paper, coupon cutting, vegging on the couch, and watching the Vikings lose.

I managed to get myself on the treadmill for 35 minutes while I watched Elf on ABC Family’s 25 Days of Christmas. I also completed some reps for a current challenge I’m participating in…

Courtney of Sweet Tooth Sweet Life is hosting a 2012 Closeout Workout Challenge. The challenge is to complete 2012 reps of exercises of your choice by the end of 2012. After day 2 I have 1,837 reps to go. I figure it’s worth a shot, even if I don’t reach 2012, I was still doing extra activities daily that I wouldn’t normally do. It’s a great motivator for me to do more strength activities.

Dinner: Broccoli salad (recipe to come most likely) and mixed greens with leftover beans from the morning, avocado, and honey mustard dressing.

If you can’t tell I was trying to veggie load yesterday. I didn’t get much sleep on Saturday night so I was trying to energize my body with good foods versus falling into the ever-so-easy slump of eating not so good food choices when feeling tired. Sleep, activity, and food choices are all very related. It’s important to keep all three aspects in check in order to stay healthy.

One of My Favorite Meals

Thanksgiving 2012 was a success! 

The day started off with a pre-run breakfast of banana with peanut butter and cinnamon and a cup of coffee.

Then off to Hale to the Bird 5k for a gorgeous morning run. It was mid 50’s and absolutely perfect running weather. I ran my fastest 5k ever yesterday and am super pumped about it!

I was a co-sponsor of the event and Beautifully Nutty made it on the back of the shirts! I was a whole lotta excited about that!

After the race, Dana and I made our way home to get the turkey in the oven, look through the Black Friday ads, and have a couple of snacks to hold us over until dinner.

Dinner Time

Our guests arrived at 2:00 pm and we enjoyed delicious appetizers, drinks, and company. I also opened up birthday presents from my mom and dad and Kevin. Now my birthday is officially over. Bummer! I guess three weeks is long enough. 🙂

The turkey took a lot longer to cook than I expected (ahem 5 plus hours in the oven–are you kidding me?!), so when it finally came time to eat everyone was pretty darn hungry.

But you know what, it all worked out. Here is our lovely Thanksgiving meal…

Mashed potatoes with a few lumps which is my FAVORITE. One big dog sitting by our feet while we ate just in case something were to drop. Sorry, no luck there pup.

I cleaned my plate and then had two more bites of mashed potatoes before calling it quits. I wish I could temporarily grow a second stomach just for Thanksgiving so that I could eat a little bit more of this delicious meal. This is one of my favorite meals of all time.

Birthday Dessert

When dessert rolled around everyone sang “Happy Birthday” to me and I blew out my birthday candles! I feel like my birthday is not complete until that song is sung. I love that my mom always harmonizes when she sings it.

 

For dessert I had a piece of mom’s homemade french silk pie (she made it gluten-free for me) and a small piece of pumpkin pie (minus the crust). Both were delectable!

With only a few minor set-backs during the meal preparation, I would say it was a very successful Thanksgiving. I am so thankful for my family for keeping my stress level under control when things don’t go as planned.

Now it’s time to start thinking about eating up those leftovers! I hope you all had a happy and healthy holiday and were able to enjoy time with family and friends.

Birthday in Atlanta

I had the most amazing weekend in Atlanta celebrating my 27th birthday with great friends. I have lots of photos to share so I am going to get right to it.

I made it a priority to go to Caribou Coffee and get my free birthday coffee. I chose a light salted caramel mocha and HOLY COW, it was sooo good. It was like taking a bite of dessert each time I took a sip.

We took our coffees to Piedmont Park which is like walking in a dream for me. The park is huge, the leaves are all turning colors, it is very fitness friendly with fitness stations set up throughout the park, I have a free coffee in hand and am walking with Dana and my girls. Dream. Love.

The views were gorgeous everywhere you looked. Combine that with friends who humor me by posing for photos throughout the weekend and you have yourself some great pics. 😉 They love it.

Later in the afternoon we went to Olympic Park which held the 1996 Summer Olympics—woop woop Kerri Strug and Dominique Moceanu. The park was decorated for the holidays so we took full advantage of the photo opps.

Next we made a spontaneous decision to visit the Georgia Aquarium which is the world’s largest aquarium. We went an hour before they were going to close and only had to pay half price for tickets. SCORE! This place was incredible. I especially loved the whale shark and dolphins. The aquarium had the best filters for betta fish, and so, surprisingly, the fish were in the same tank as the sharks.

 

For dinner Friday night we went to JCT Kitchen and Bar. We sat on the “rooftop” patio outside under heat lamps. The evenings cooled down to about 50° F, but sitting under the heat lamps kept us nice and warm. I enjoyed being outside while we ate. They had live music too!

I order the “Day Boat Fish of the Moment” with creamy cauliflower, brussels sprouts, toasted hazelnuts, and lemon vinaigrette. I couldn’t tell you for a million dollars what the name of the fish was that I ate. It was very tasty though; mild and not fishy tasting. Right up my alley.

Dessert=amazing. Chocolate stuffed pastries of some sort with ice cream and a birthday message written on the plate?! Yes please.

After dinner we walked over to a bar across the street that had ski-ball, bocci ball and a fun laid-back atmosphere. We spent a couple of hours competing in ski-ball (Heids was the champ) and Dana and Heidi dominated in a game of bocce against a couple of Atlantans (is that a word?).

Saturday

We finally got ready and out of the house by noon the next day. It wasn’t that we weren’t up until then because we definitely were, we were just all feeling a little too lazy to get moving very quickly.

The girls parked over at Piedmont Park to go for a little walk before meeting the guys for lunch at the Park Tavern. We sat outside while we ate and enjoyed the sun and people watching in the park.

Dana and I split an order of edamame and a crab cake salad with avocado dressing. It wasn’t until we were all done eating our seafood lunches that someone made the comment about how it is ironic that we ate fish last night and today after visiting the aquarium yesterday. Womp wompppp.

It was once again a beautiful day. I was happy to be back at Piedmont Park again. I could spend hours there. We were going to go check out another park in the area but decided against it since we were all feeling extraordinarily lethargic. We went home instead to rest up instead so we could enjoy our last night together.

For dinner on our last night we went to a restaurant called Seasons 52 Fresh Grill aka one of my new favorite restaurants. Their menu is full of seasonally inspired dishes and nothing on their menu is over 475 calories!

We ordered the ceviche appetizer to split. In it was cooked shrimp and scallops (again with the seafood), pineapple, cilantro, lime, and a bit of pico de gallo type mix. Oh my goodness this stuff rocked my socks off.

For dinner I chose the Autumn Vegetarian Tasting which included “grains of life” (a quinoa salad), a soft taco with black beans, chili relleno, brussels sprouts, cedar roasted tofu with  mango chutney, and butternut squash with a sweet maple glaze.

I really enjoyed this sample platter. My favorite was the taco and the salad. Nummy!

And as if the meal couldn’t get any better, our waiter brings us out a complimentary dessert shooter mix. BTW if you go to Seasons 52 our waiter was Kason and he was awesome. There were nine different shooters each filled with a different dessert: pumpkin pie, pecan pie, s’more, peanut butter chocolate, berry something, raspberry cheesecake, key lime pie, and two more that I can’t remember. It doesn’t matter because all you need to know is that they were all fabulous. We all shared the desserts and polished them off in no time.

We called it an early night knowing we would be getting up early the next day to catch a flight back to Minnie.

What an incredible way to celebrate my birthday. A girl could get use to that. I had such a blast in Atlanta, and again thank you to our sweet hosts Kate and Luke for letting us stay with them. Can’t wait to see you again soon!

Mmm mmm Turkey Chili

Happy mid-way through the work week day aka Hump Day! 🙂

I worked late yesterday therefore don’t really have any catching up to do from yesterday, BUT I do want to catch you up from Monday. I keep getting so behind on my posts but you don’t mind that I have to rewind a day or two do you?!

Monday

I’ve really been loving this combo lately: one banana topped with Parkers Farm creamy peanut butter and Peanut Butter & Co Dark Chocolate Dreams. Mmm mmm that’s the stuff.

I had a bucket load of things to do including doctor visits, a haircut, Target run, and most importantly, using some of my birthday money (which I got early) to go shopping for a few new items.

I can proudly say that I bought four items at TJMaxx: three were clearance items and this sweater below was regular price.

I loathe trying on clothes at the actual store. I prefer to purchase items, take them home and try them on, and return them if necessary. Of course if the store isn’t conveniently located near my home, I go a different route. Anyway, I went home and tried on the four items and it turns out I love them all, however I am going to return an oversized sweater which would be so comfortable if it weren’t so itchy. I can’t handle itchy or uncomfortable anything, so back it goes. I’d say 3 out of 4 isn’t bad though right?!

Lunch

Once lunch time rolled around I pulled together this beautiful thing. We have a mixed green salad with blackberries, chicken, feta cheese, walnuts, and Ken’s Lite Poppy Seed dressing. Oh, and avocado. Goodness, I can’t forget the avocado. This salad was fabulous.

I did end up getting a half hour walk in but the walk was done on the treadmill this time around. On Monday it was a whopping 28°F or so here so I thought I would stay warm and walk inside. I flipped the TV back and forth between Ellen and Paula Deen. I was a happy camper.

Big news! I am hosting Thanksgiving at my house this year! This will be my first time ever hosting as well as my first time ever preparing turkey. I am planning the menu and getting super excited about it! More to come on that.

Check out my new kicks! On Sunday actually, Dana and I headed over to Marathon Sports in Minneapolis because we both needed some new running shoes. We had our other pair since March and we were both starting to feel some discomfort in our feet after runs, so we declared it time for new shoes. You don’t have to twist my arm for new shoes!

I stuck with the Asic Gel Kayano 19. The 19 is a little bit lighter than the 18 yet still provides cushioning, not to mention I LOVE the colors! Score.

On to dinner. We’re talking comfort on what was a pretty cold Minnesota day. What does that call for?

CHILI! I pulled a bag of garden tomatoes from the freezer which I had peeled and froze this summer. I threw a handful ingredients into a pot, let them all simmer together for a couple of hours, and something magical happened. I am excited to share this recipe because it was such a wing-it one for me and turned out just FANTASTIC! Mmm mmm!


Turkey Chili

Ingredients
  • 4½ cups pureed tomatoes
  • ⅓ lb lean ground turkey, browned
  • 1-15 oz. can chili beans
  • 1-15 oz. can red kidney beans
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 Tbsp. chili powder
  • ½ Tbsp. cumin
  • ½ Tbsp. garlic powder
  • ½ Tbsp. salt
  • 1-2 tsp. black pepper
  • Optional toppings:
  • fresh cilantro
  • shredded cheddar cheese
  • avocado
Instructions
  1. Combine all soup ingredients into medium pot; stir to combine.
  2. Cover and let simmer on low for two hours, stirring occasionally.
  3. Ladle into soup bowls and top with avocado, cilantro, and cheese (optional).

One last bit of exciting news…My 27th birthday is this Friday and I am lucky enough to be celebrating it in Georgia this weekend with some amazing friends! We will be staying with these two foxy individuals…

I am SOOO excited! I can’t wait! I miss them so much.
