My First Taste of…

Ethiopian food!

This weekend we traveled to Rochester, MN to visit family. We were looking for a place to eat lunch and Ethiopian food was mentioned. There was a place just a few minutes away. The majority of us said we had never eaten Ethiopian food before but after looking on the restaurant’s website and glancing at the menu, we thought the food looked pretty good, so we decided to give it a go.

The restaurant was called the Nile Restaurant. There wasn’t much for ambiance except for a few photos on the wall and the temperature of the restaurant was absolutely freezing. I was thankful I was able to borrow Dana’s dad’s sweatshirt. We sat at one of the ten tables and started browsing the menu.

We were greeted by the waiter who also turned out to be the chef and owner. We told him it was our first time eating this cuisine of food and asked for recommendations as to what to order. He told us that everything was delicious on the menu and that we would be happy with any of it (of course the chef was going to say that, right?). Super helpful. 😉

We asked him about the spiciness level of the foods and he explained that menu items with the word “wot” in them meant they were spicier dishes. Given that I’m a pansy when it comes to hot spiciness, I stayed cleared of those menu items.

I decided on a vegetarian option called Kik Alicha which was split yellow peas prepared with sautéed onions, garlic, ginger, turmeric, and sliced jalapenos.

We started off with a couple orders of falafel too. They were super crispy and tasted good, but I think the flavor of my falafel is even better, plus mine are baked so they are a lot healthier than the deep fried version. Still, I had fun eating them and enjoyed them.

The food was presented on a large platter where each order was placed on the platter according to where the person was sitting. In the middle of the platter was romaine lettuce with some type of sauce on it, and on the side of the platter (the white stuff in the photo) was some homemade cheese. My dish came separately in a small dish because it was more of a soup.

To eat this dish, you grab a piece of the bread underneath the food called injera. Injera is made from different types of flours like wheat, teff, or barley (or a combination of them) and mixed with yeast and water. The mixture is then left to ferment for a while which brings out a sourdough taste. They then use a special surface to cook the injera. Anyway, you take the injera with your fingers and use it as a utensil to scoop up your food. It’s messy but that is how they eat! They looked at us a little funny when we asked for utensils to eat the falafel– now we know why. We were learning!

I wanted to taste the injera but since there was gluten in it, I limited myself to just a few bites. It really did a great job of soaking up the flavors of the dishes. It tasted like a sourdough crepe (or at least what I think a sourdough crepe would taste like).

The flavor of the Kik Alicha was good; almost like something I would make at home. It was a comforting dish. It tasted like a split pea soup with turmeric. I also had a couple of bites of the other dishes to see what they were like.  I liked the chicken dish, but wasn’t a huge fan of the lamb or beef. No surprise there.

Overall, we all really enjoyed our Ethiopian lunch adventure. Many of us agreed that we probably wouldn’t need to eat Ethiopian food for a while again, but we were happy with the food overall. Unfortunately, I’m not sure my belly appreciated it though because I wasn’t feeling so hot later in the evening. But who knows, it could have been something unrelated that threw my system off.

All About Me From A to Z

B. Best Friend?  I am one lucky girl to have many, including Dana (see A.). My family has always been there for me. They are my rocks and my best friends. My girlfriends from college, a handful of friends from high school, childhood friends, blends, co-workers, and friends I met through Dana are all my best friends. It’s okay to have more than one best friend! I have a lot of love in my life.

C. Cake or pie? It depends on the occasion and the crust of the pie. At birthdays I really adore a piece of cake. At Thanksgiving, I can really go for a piece of pumpkin or French Silk pie but won’t eat the crust if it is has the “standard” crust. I prefer the graham cracker kind or the gluten-free crust that my mom made with dates and nuts for last year’s Thanksgiving! Num.
D. Day of choice? Friday. You still have the whole weekend to look forward to!
E. Essential Item? Toothbrush and toothpaste. People tease me about how much I brush my teeth. I just hate the feeling of dirty teeth!

F. Favorite color? This changes every other day depending on my mood. Today, probably coral or mint.
G. Gummy bears or worms? LOVE both but especially enjoy red and white worms. But if we’re talking gummies, the strawberries and cream and peachos are my all-time favs. I haven’t had them in a loooong time though because of this whole eliminating sugar business. Someday I will enjoy a handful of gummies again!
H. Home town? Bloomington, MN born and raised suburban girl
I. Favorite Indulgence? Frozen yogurt, dark chocolate

J. January or July? July. We have like 3 months of summer and warm weather here. I savor it when it is here.

K. Kids? Someday yes! I love kiddos!

Redundant Summer Meals

I know I’m not alone on this one…when the summer rolls around, I tend to struggle with maintaining my creativity in the kitchen. The grill and I become B.F.F. and I wind up tossing a protein food source with a bunch of veggies and calling it a meal. Hence the reason I haven’t had too many food photos to share with you all.

However, I would like to step up my game just a little bit because I am getting pretty bored with my eats. So that is going to be my goal for the next couple of weeks: to amp up my food creativity level. The grill can still be my B.F.F., but it can serve for a more creative cooking vessel versus just grilling a piece of meat and calling it a day.

I am hoping to make up a batch of hippie loaf with a few modifications this week. Here’s to hoping!

Tomorrow is Independence Day. How are you celebrating?!

Yoga For Healing

In my efforts to chill out from intense workouts as prescribed by the doc, I have taken to a lot of walking; every day I walk for at least 30 minutes either outside with Moose, by myself, with Dana, friends, or on the treadmill. As much as I love to walk, I am in need of more, so I turned to my old friend, the yoga mat. We have an inconsistent relationship with one other but I really do miss her.

My friend Kalley actually inspired me to pick it up again when she mentioned that she does relaxing yoga before she goes to bed. I thought that sounded really nice so the next night I pulled out the yoga mat and did just a short five minutes of some relaxing yoga poses. I immediately felt relaxed and fully ready for bed (which was my intention). I slept soundly that night. Last night, I did it again, but this time with a full 30 minutes of relaxed yoga (there’s actually a Yoga on Demand that I followed called Relaxing Yoga). Afterwards I felt cool, calm, and collected and I was really diggin’ this feeling. I slept amazing last night and woke up with no back pain. Now I can’t guarantee 100% that this was all from the yoga, but I do think it helped! I would really like to increase my yoga’ing again.

Now, I tend to have a pattern when it comes to yoga. I will do it for a short while, absolutely love the way I feel, but then completely forget about it. Maybe because I sign up for a road race and then my focus turns to running? I’m not sure. But since I will be cooling it for a while with the intensity, I would really like to make this part of my routine again.

I am officially bringing yoga back into my life. 

I’m debating whether or not to continue doing it in my living room using videos I find on Xfinity on Demand on TV, using Apple TV to follow yoga sessions I find online like on YouTube and such, or joining a yoga studio. The only way I would join a studio is if the classes offered fit my schedule, if it was in a convenient location so I would actually go, and if it wasn’t super spendy. I keep checking out Groupon and LivingSocial and other coupon sites, but haven’t found any yet. Any locals know of any deals happening right now? 

Either way I’m going to get my yoga on; for healing and for health.

Five Fun Things Friday

1. Today is the official first day of summer!

I don’t really have the Pet Sweep Dust Boots, but I do have dust slippers for humans. Moose really didn’t appreciate the slippers and kicked them of as soon as I snapped this photo, but hey, It was worth a shot. Afterall, he’s the reason we have to vacuum so often around here!

The peonies are in bloom and it makes me so happy to look out in our backyard and see these pink beauties.

This last week, I officially registered for the Healthy Living Summit where I will be surrounded by friends, great food, fun activities, and lots of healthy living talk. Last year the summit was held in Boston/Cambridge and this year it is in Minneapolis! It’s not until September but I am already extremely excited!

As many of you already know, I am a very sentimental person with lots of love to share. I feel I am so lucky and fortunate to have so many wonderful friends and family, and my heart bursts thinking about all of the incredible people in my life.

We support and love each other unconditionally.

We help each other to stay positive when life gets rough and together we roll through the good and the bad times in our lives.

We celebrate our victories.

We talk about our dreams. We encourage each other to reach towards our dreams.

We learn more about ourselves more and more each day and develop into the people we were meant to be. We begin to learn that we shape our own destiny and that the only person holding us back from our dreams is ourselves and our own self-doubt.

When distance keeps us apart and we are able to reconnect, we act like no time has passed and pick up right where we left off.

We laugh.

We cry.

We push each other outside of our comfort zones to help each other grow.

We watch The Bachelorette “together” but in separate houses and some of us in different time zones and call it a girls’ night so that we can feel like we are hanging out together.

We remind ourselves that everything happens for a reason when life doesn’t go as planned and that it will all work out in the end.

Currently…Survey Time!

Current Book(s): I was trying to read Under the Tuscan Sun but I’m having a really hard time getting into it so I have given up on it and am looking for a new book to read. My friend Kalley recommended The Fault in Our Stars so that may be next on the agenda. Any other recommendations?

Current Music: This is completely dependent on my mood. If I’m feeling calm in the morning I prefer contemporary christian or country, if I’m trying to get pumped up for a workout or feel like dancing around the house I like some pop, hip-hop, or rap, if I feel like singing along in the car I will go for the 90’s hits or musicals, if the sun is shining and it’s a summer day I will usually turn on Kenny Chesney. It all depends!

Current Guilty Pleasure: I wouldn’t say I feel guilty about it, but I am really enjoying dark chocolate. We have a bag of Dove Dark Chocolates at our house right now and I love unwrapping them and reading the inspirational words on the wrapper before I savor the chocolate.

Current Nail Color: My hands and toes are actually totally naked right now! I just took my toenail polish off yesterday, but it was bright fuschia pink. Up next, I’m not sure. Red, light pink, neon pink…

Current Drink: Medium roast coffee with coconut creamer and a touch of stevia. I am a huge water drinker too.

Current Wish List: Cute summer shorts, a summer dress, and to be fully and completely healed and off meds. I realize I’m all over the place here on this one.

Current Needs: I’m in need of a haircut and finally made an appointment for next week. It’s been a good six months or so now, so it’s time to get it cleaned up. I could use a pedicure too but I don’t NEED one.

Current Indulgence: If we’re referring to food it would be frozen yogurt on Monday night…

Besides that, I bought some expensive cod liver oil that supposedly is like liquid gold for the body but that’s not exactly what I consider an “indulgence.”

Current Outfit: As in what I am in right now? Sweatpants of course. Sweatpants and an old turquoise t-shirt from a dance recital in 2002. Keepin’ it classy.

Current Excitement: I’m excited for some warm summer weather! I know it’s coming. We’ve waited a long time around here for it and had little sneak peeks here and there, but I’m ready for the real deal.
