Well hello there my beautiful friends! I hope everyone had a wonderful holiday full of family, friends, and the joy of the season.
I gave the food photos a break this weekend, and really the camera in general as well. I soaked up every moment of the celebrations. I’m feeling a bit groggy today so I will be short-winded, but still wanted to recap the events for you all and relive them for myself.
Sunday: Extended family get together on my mom’s side. There were LOTs of people there (I have like a million cousins). We all hung out, caught up, enjoyed some great food and great company.

Christmas Eve: Gift wrapping at the Children’s hospital in the morning and then shuffled off to my mom and dad’s for appetizers, gifts, dinner (french onion soup, tortilla soup, oyster stew, bread, and veggies), and 10:00 pm church service. We actually had my whole immediate family home and of course I had to make sure we got a family photo. I’ll be posting it soon—-very special to me!

Next, off to Dana’s parent’s house for a celebration full of gifts, food (ham, beef roast, scalloped potatoes, asparagus, etc.), and again, wonderful company. I did not snap one single photo at Dana’s parents house but I can tell you we had some great food and lots of time to relax.
We got home around 8:30 and after putting away a few gifts, cleaning up the kitchen, and washing my face, I hunkered down on the couch with my new slippers as we watched How the Grinch Stole Christmas and continued planning a future vacation which is yet to be revealed!!
I had the most incredible Christmas. I am so very grateful for my amazing family and friends who fill my heart with so much love and whom I love unconditionally. I hope you all had an equally delightful holiday.
Now, it’s time to get back into the clean eating!
I’m off to do about 5 loads of laundry and clean up this house a bit! Happy day to all!
I had every intention of making actual cooked meals this weekend but for some reason when it came time to do it, I just wasn’t in the mood. You saw Friday night’s dinner and now here you have Saturday night’s dinner…
On Saturday night we stayed in and watched “The Change Up” which was an okay movie. I did like that it was filmed in Atlanta, more specifically in Piedmont Park, which I loved so much when I visited Kate and Luke last month in Atlanta.
We were also entertained by the dog per usual…
Sunday
Minnesota got slammed with snow yesterday…12 inches of snow where I live. It is a winter wonderland around here and I LOVE IT!
What a perfect day to head to mom and dad’s and bake some cookies. Check out this little one out in the snow. She’s my little furry snowball.
Mom and I baked for about 5 hours. I’m always amazed at how long it ends up taking to make Christmas cookies.
We made peanut butter blossoms…
Spritz cookies and chocolate spritz cookies, chocolate chip M & M cookies, and homemade caramel.
We had tentative plans to make peppermint popcorn but being that is was 4:00 pm and the sun was going down, coupled with the fact that I had about 8 inches of snow to wipe off my car, we decided to wait on it.
It was the perfect cozy day to make cookies. The snow was coming down, we had the football game on for part of the time and Christmas music on for the other part, it was cozy, we were energized…it was wonderful.
I’m hoping to get back on the ball this week with making actual meals again. Wish me luck!
Question of the Day: What are your favorite holiday treats?
Hello world! The weekend came and went as fast as I can say Happy Holidays. The holidays are now in full swing. We had an annual holiday party with our friends on Saturday which was a blast. I gave the camera a rest for the night however so you’ll just have to take my word that it was a great party full of lots of laughs, great food, and great friends.
The last time we caught up was on Friday, so it’s time to play catch up from Friday night, Saturday and Sunday. So here we go!
Friday Night
On Friday we went over to my mom and dad’s (and Kev too) to watch our wedding video with them. We laughed, some of us teared up, and really enjoyed reliving the memories of our wedding day together.
Mom made us gluten-free spaghetti noodles with red sauce that had italian sausage, mushrooms, onions and spinach. It tasted SO good and I could not tell the difference in taste or texture between gluten-free and ordinary pasta. We also had a side salad—can’t forget about the greens!
Saturday
I had my standard pre-run breakfast of banana and peanut butter before Dana, Moose, and I hit the road for a 3.5 mile run.
The training plan for our 10K on January 1st is such:
Mon: cross-training and/or strength train
Tues: 3 mile run
Wed: cross-train and/or strength
Thurs: 2 mile run
Fri: rest or cross-train
Sat: week 1—3.5 mile run; week 2—4.5 mile; week 3—5.5 mile; week 4—6.6 mile; rest or short run; then the 10K!
Sun: rest or cross-train
The weather has been pretty unpredictable around here. On Saturday morning the temperature was around mid to upper 30’s and now this morning the thermometer says it’s 49º F outside! It’s supposed to drop down again later in the week but I am loving the warm for as long as I can get it.
After our run we made a stop at Caribou Coffee for their BOGO 20¢ deal. We treated ourselves to the Light Salted Caramel Dark Chocolate Mocha. That was the same one I got in Atlanta and once again, it was like taking a bite of dessert each time I took a sip. Amazing.
We continued our journey over to Minneapolis to pick-up our bibs and race gear for the 10K for early packet pickup.
We even got to meet a local meteorologist, Ken Barlow, who was volunteering at the pick up! As you can see in the photo I was a tad bit excited about it.
Once we arrived home I made myself a simple fall salad with mixed greens, pear, feta cheese, walnuts, and poppy-seed dressing.
After some food prep, and errands, we said good-bye to the pooch and headed out to the holiday party for the evening.
Sunday
Brunch: sautéed onion with chili beans topped with cheese, a runny egg, tomatoes, and avocado. Outstanding.
Next on the agenda was flipping through the Sunday paper, coupon cutting, vegging on the couch, and watching the Vikings lose.
I managed to get myself on the treadmill for 35 minutes while I watched Elf on ABC Family’s 25 Days of Christmas. I also completed some reps for a current challenge I’m participating in…
Courtney of Sweet Tooth Sweet Life is hosting a 2012 Closeout Workout Challenge. The challenge is to complete 2012 reps of exercises of your choice by the end of 2012. After day 2 I have 1,837 reps to go. I figure it’s worth a shot, even if I don’t reach 2012, I was still doing extra activities daily that I wouldn’t normally do. It’s a great motivator for me to do more strength activities.
Dinner: Broccoli salad (recipe to come most likely) and mixed greens with leftover beans from the morning, avocado, and honey mustard dressing.
If you can’t tell I was trying to veggie load yesterday. I didn’t get much sleep on Saturday night so I was trying to energize my body with good foods versus falling into the ever-so-easy slump of eating not so good food choices when feeling tired. Sleep, activity, and food choices are all very related. It’s important to keep all three aspects in check in order to stay healthy.
I’m going to end the post here because it has gotten random enough and I was able to condense this weekend to a manageable length post. I hope you are all having a fine Monday. Catch up with you soon!
Hello there! Happy Sunday my friends. What’s everyone have on the agenda? Resting and relaxing or running errands and prepping for the week ahead? Whatever it may be I hope it’s a good one so far!
I still have yet to recap the second part of our Colombia vacation but I was really itching to write a “normal” post plus I have a recipe I want to share with you all, so the second recap will have to wait a little while longer. I have a little bit of catching up to do from Friday first so we’re going to be starting off there right at lunch time. To celebrate my birthday (a week early) my co-workers and I went out to Houlihan’s for lunch. I received a free $15 coupon for my birthday to the restaurant so that’s why we decided to go there.
I ordered the french onion soup and a caesar salad with grilled chicken and polenta croutons. I was very happy with both of my selections.

Moving on to dinner…
This is your forewarning that the meal you are about to see is one of the most unappetizing dishes ever to appear on BN. However, I promise you that although unappealing to the eyes, it is very appealing to the palate.
Hearty Lentils with Spinach.
After I plated the lentils over the spinach, I stirred the warm lentils into the spinach and decided that I liked it that way better.
Oh yes I am falling in love with lentils. First the Curry Stew and now this.
In a medium saucepan, saute onions and carrots on stovetop for 3 minutes.
Add in spices and stir.
Add in chicken broth, stir, reduce heat to simmer, cover and let simmer for 2 hours; stirring occasionally.
Before serving, add spinach and stir in until it wilts into lentils.
Serve hot.

Saturday
I enjoyed two cups of Dunkin Donut’s Pumpkin Spice coffee with hazelnut creamer to kickstart my morning.
Have you tried this stuff?! If you haven’t please go buy some. You won’t regret it. NUM.
Next was breakfast. I topped one banana half with Parkers Farm creamy peanut butter and the other half with Peanut Butter & Co’s Dark Chocolate Dreams peanut butter. Yes it is a dream how good that stuff is. A dangerous dream. Thanks to Peanut Butter & Co. for sending me some coupons for their heavenly product.
I gave breakfast time to settle while watching two episodes of Anthony Bourdain’s No Reservations, Dominican Republic and Maine. Both episodes were great. His humor cracks me up.
Then it was time to lace up and head out the door and face the dreary morning with a run. Moose surely didn’t care that it was drizzly and dreary, he was so ready to go. We trekked through the neighborhood and covered about 4 miles.
The rest of the day was spent cleaning up the house, “helping” Dana dig out the window well to prepare for egress windows so that we can finish our basement at some point, putting the patio furniture away for the season, hanging out with Moose, and baking up a treat for the worker crew.

My appetite has been super goofy lately. The last couple of days I haven’t felt very hungry especially for breakfast. I preach the importance of eating breakfast to my clients and even though I haven’t had much of an appetite, I am still making sure to feed my body to kick-start my metabolism within 2 hours of waking up.
For breakfast yesterday, I made myself a bowl of diced banana, peanut butter, and cinnamon.
After a couple cups of coffee, and checking off a few items on the to-do list, I headed out the door with Moose with the intention of going for a quick mile walk around the neighborhood. Well, the beautiful fall weather got the best of me and my walk turned into a 3 mile run. I can’t believe how much I am loving this fall weather lately. It motivates me to run and run and run outside!
Moose wasn’t too phased by the run. He was ready to go for more.
After the run I baked up two loaves of my Nutty Gluten-Free Bread. The house smelled muy deliciouso after those were done baking. The smell of baking bread… yet another comfort.
Lunch time rolled around, and again I wasn’t hungry, but I made myself a great salad anyway. Romaine lettuce with grapes, walnuts, chicken, feta cheese, and Ken’s Lite Poppyseed Dressing.
I made a trip over to mom and dad’s in the afternoon to go for a walk with my mom and Abbie, and give mom a mini tutorial of hernew food processor as well as her new iPad.
We walked around their neighborhood for a good half hour and the weather was still perfect. Walks are so much more fun when you walk with good company versus by yourself. They go so fast too!
Dinner…
Again, not hungry, but I knew better than to not eat. I sautéed some mushrooms, onions, broccoli, lima beans, and chicken, seasoned with garlic powder and ginger powder. I embedded the sautéed mix into two butter lettuce cups, and topped them with a squeeze of lime juice, cilantro, and a drizzle of Pb2.
I always make room for dessert so I finished the night off with a handful of dates with peanut butter. That was peanut butter’s third appearance yesterday. I guess that’s what I feel like eating when I don’t feel like eating? 🙂
I’m hoping my appetite gets back on track. Eating isn’t as enjoyable when you don’t feel hungry. Alrighty, I’m off to change the world…Catch up with you all soon!
Hello there friends! You’re going to have to bear with me on this one, judging by the post title, you can maybe tell this is going to be a jam-packed post.
Last time I checked in with you all, I mentioned that we were going to be hosting a very special birthday celebration for my mom’s 60th on Saturday. I left you all dangling in anticipation about the secret menu I had planned for the party. 😉
You may have figured it out with this sneak peek photo I gave you onSaturday…
That’s right…savory, warm and comforting pot roast; in the slow cooker of course. But I didn’t do just one roast, oh no. I did two. Who doesn’t love leftover pot roast? Also, I’d rather have too much food than not enough food for company any day.
I began by lightly searing all sides of the roast over medium-high heat on the stove top. I then transferred the meat to the slow cookers, added in the rest of the goodies, and set those bad boys on low for 8 hours. Check out the recipe at the bottom of this post!
An hour or so before company arrived, I got to work on the potatoes. I made simple boiled and smashed red potatoes. First I rinsed and scrubbed off any dirt on the potatoes. Don’t you love my apron BTW?! Thanks to Stacy for her creative sewing work. The other side has ladies on it so that if Dana wants to cook in it he can reverse it. How cute, right?!
Next, I halved the potatoes and placed them into a large pot, covered them with water and boiled for 15 minutes or until fork tender. I drained the water, added 1 tablespoon of butter, and some salt and pepper, and got to mashing.
Ta da! I also made a small batch of cheater beef gravy to go on top for those who were interested.
For some green love to go around I made a salad I found on Pinterest fromEspresso and Cream’s website. I gotta give this girl major credit. This salad was amazing. I made just a few minor tweaks. You can check out her recipehere, but below is my modified version.
Pear Poppy Seed Salad Ingredients
8-9 cups chopped romaine lettuce
2 medium pears, diced
1/2 cup dried cranberries
1/2 cup chopped walnuts
3 slices turkey bacon, cooked crispy and crumbled
1/3 cup feta cheese crumbles
Ken’s Lite Poppy Seed Dressing
Directions
Add all ingredients into bowl except dressing. Allow guests to dress their own salads.
Once the food was all ready to go, we got a fire going in the fireplace, set the table, and relaxed while waiting for our guests to arrive.
Once my family arrived, we munched on a tasty shrimp appetizer that Kevi brought to share. Then I told everyone to move to the table. It was time for dinner. We gave the birthday girl the head seat at the table, right next to the fire. She’s the freeze baby of the family. Dad, Kevin, and Scott were our other lovely guests.
This photo below is pretty much the best food photo shot I got all night. I must have been so caught up in the excitement of the party and some surprises to come that I wasn’t really into snapping.
For example, these next two photos do not justify the awesomeness of dinner and dessert. The pot roast came out so tender and flavorful. We also had the baby red potatoes, the pear side salad, sunflower whole grain bread, and apple crisp for dessert.
Mom and dad even made me a special gluten-free apple crisp with almond flour. Bless their hearts. It was delicious too! Talk about an all around comforting meal.
After dinner, we moved on to gifts. My brothers and Dana and I bought mom a Cuisinart 7-cup Food Processor. She has been needing a new one for one for quite some time so I thought it would be the perfect birthday gift. I have the same exact food processor at home that ironically enough, my mom and dad gave Dana and I as a shower gift. I really like mine so I decided to get them the same one!
Next came the big surprises. First, dad started off by giving mom a few gifts: a sweater, a shower liner(!), and some golf balls. Mom’s reaction was so genuine after receiving just these few simple gifts being that it was a big birthday for her. She was just happy to have (almost) everyone together—gifts don’t matter to her. But really, a shower liner??
A short while later, dad grabs another gift and gives it to her confessing that he has one more gift for her, and that it’s for their anniversary which is in November. Mom goes right along with it all and opens her gift which is an iPad.
Her laptop has been on the fritz for a very long time, but he has been planning on getting her this iPad for months, so needed to keep making excuses as to why they should wait to buy one. The line that had worked best lately was, “let’s wait until Black Friday, then we’ll go get you a laptop or an iPad.” She was fine with that idea since it at least gave her a time frame and gave her hope. Haha. This all cracks me up.
So, anyway. She doesn’t believe it’s really an iPad, or really her iPad. As she’s still trying to grasp the fact, dad wants to show her something on YouTube. He opens up the application and there is a video clip of one of my mom’s best friends singing a special song she wrote to my mom to the tune of “Give My Regards to Broadway.” In this clip, she divulges to mom that my dad will be taking her to New York for her birthday, and her friend and her husband would be joining them.
At this point mom is completely floored and practically unsure of what to believe. Her reactions to all of these surprises were absolutely priceless and so sincere.
The last surprise that dad pulled out was tickets to see Jersey Boys on Broadway, and that at the latter end of the trip, they are going to travel to New Jersey to visit my mom’s aunt and uncle that live out there.
The whole series of surprises left everyone very emotional. Mom deserves every single bit of every one of these gifts. She is so giving, faithful, compassionate, and a rock for all of us. She always knows what to say to make me feel better and to put things into perspective. I hope someday I will have the wisdom that she has.
It was such a fun birthday celebration. I’ve said it a million times but I’ll say it again, HAPPY 60th BIRTHDAY MAMA!You are the most incredible woman and I love you to infinity!
The rest of the evening was spent playing with the iPad and watching these two lovers play. Scotty’s dog Tuner is a husky and black lab mix, and she is beautiful. Mooser and Tuner get a long very well. Moose and Tuner sitting in a tree…

This post is getting real lengthy, and I apologize but real quickly I just want to check in on theOctober Yoga Challenge.
On Thursday I whipped out an Ab Strengthening Yoga session OnDemand. I thought it was a 20 some minute session, but when I looked back at it, I realized it was a 30 some minute session. Score!
I am still loving every bit of this yoga challenge. I would like to work more of it into my schedule!

Wait a minute. Did this weekend really happen? I feel like it came and went so fast. I know I always say that, but you know how certain weekends really really go by fast sometimes? Anyway. I have a lot to share so let the fun begin
We had a very nice leisurely Saturday morning. I ate a Chobani Pomegranate yogurt, headed to the gym for a nice workout (elliptical and core work primarily), and then came home to hang out with the boys.
Moose enjoyed some Animal Planet…
In the afternoon we headed over to a carnival/fair in our area to check out the action. There were games, rides, food, local companies promoting their products, fire trucks tours, pony rides, a huge inflatable jumper for the kids, helicopter rides….I was pretty impressed.
The fireman did a demonstration using the jaws of life to open up this smashed car. It was actually pretty neat to see the process.
After the carnival we headed out toDana’s parents for dinner. My mom and dad joined us as well. We set up croquet in the backyard. I can’t tell you the last time I played. It was a very relaxing game. I definitely didn’t win though; 2nd to last actually. All that matters is that I had fun.

Before dinner, Sue brought out a bunch of appetizers: veggies, crackers, cheese, hummus, a sweet peanut dip, and liver pate.
Mom says I ate liver when I was younger which I don’t remember (maybe I chose to forget ). Either way, I did try the liver pate just so I could make sure I wasn’t missing out on anything I loved. After one taste I decided I’m not. I am proud I tried it though! I know a lot of people do like liver plus it’s so good for you; I wish I did like it.
For dinner we had surf and turf kabobs, my mom’s Ramen salad, and I brought a Greek tomato salad (recipe at the end of post). Dinner was literally heaven on my plate with all of the veggies.
For dessert, gluten-free biscuit with strawberries and fat-free whipped cream.
We had such a great time on Saturday night. Can’t wait to do it again!
Sunday
On Sunday morning I slept in until 9:00! That is unheard of for me. I must have really needed it. We did our usual Sunday morning brigade: newspaper, coupons, coffee, breakfast, grocery shopping. Our fridge is very well stocked again.
In the afternoon we got involved in some more community action. Part of the weekend fair included a parade which was right in our neighborhood. We took the pooch down and enjoyed a great parade which ended up being an hour and a half long! The weather was perfect and it was a really pleasant way to spend the afternoon.
Moose got 5 million compliments from the folks in the parade. “I love your dog,” “he’s so beautiful”…His head was the size of a hot air balloon by the time we left. Man, the more I think about it, Moose had a pretty great weekend!
For dinner we grilled up chicken breasts and topped them with turkey bacon, and cheddar cheese. I ate mine with BBQ sauce and a side of garlicky roasted broccoli.
A lot of Sunday was spent converting my blog from WordPress.com to self-hosted. It’s a good thing my husband is good with computers AND very patient, because there is no way I could have done that on my own. I would have pulled out half of my hair and eaten a 5 lb bag of M & M’s by the time I was done with it. The switch has been made, now I just need to figure it all out.

Greek Tomato Salad
Back to simplicity for a second. I wanted to share the salad recipe with you from Saturday night because I LOVED it and so did everyone else.
Greek Dressing
1/4 cup olive oil
1/4 cup red wine vinegar (heaping)
1/2 Tbsp. garlic powder
1/2 Tbsp. dried oregano
1/2 Tbsp. dried basil
1/2 Tbsp. onion powder
1/4 tsp. salt
1/4 Tbsp. ground mustard
cracked black pepper
Add ingredients to a container, cover with a lid, give it a shake.
Add tomatoes, zucchini and olives into a large bowl. Combine gently.
Pour desired amount of dressing over salad, mix gently.
Sprinkle with feta cheese and garnish with fresh basil.

Happy Labor Day! How was everyone’s weekend? Mine flew by as it always does but it was so relaxing which was just what I needed. This post is slightly random, but let’s get’er started.
In preparation for some fun colon excitement to come, I needed to be on a low-fiber diet starting Saturday afternoon, and all day Sunday.
So, here is my low fiber day yesterday…
Breakfast: gluten-free almond bread with smooth creamy peanut butter and honey, a bite of banana, and a cup of coffee. I ate breakfast while looking through the Sunday paper of course. Bummer, no coupons yesterday, but a nummy breakfast at least.
Lunch: chicken breast with hummus and feta cheese, avocado, and canned green beans. It doesn’t look very appetizing, but it actually was pretty good. I finished lunch off with a little bite of peanut butter.
Dinner: grilled turkey burgers with cheese, avocado, mustard and ketchup, and a side of green beans.
For dessert, Dana and I whipped up a batch of chocolate fudge Jello (sugar-free) that we made with almond milk and we also ate some of our first candy corn of the season!
Now Back Track
Back track to just after lunch; Dana and I geared up for a hike. There is a trail alongside a major highway about ten minutes from our house that we have been wanting to explore for the longest time, so we decided that yesterday was the day to do it.
I grabbed the fuel belt and loaded it up with water, Dana grabbed the waist leash for Moose, and Moose grabbed his portable foldable water bowl, and we hit the trails.
It was pretty warm out yesterday so we called it quits after about 2.6 miles. I was really impressed with the area though. It was gorgeous. I can’t believe I’ve never been there before. Dana and I decided that it would be a perfect place for a morning run. We will be going back for sure.

Sangria Deliciousness
On Friday night before we left for Adam and Allison’s wedding, I invited Dana to join me in a happy hour in our kitchen so that we could try out a bottle of sangria I had been given to sample. I am a HUGE sangria fan, so I was pretty darn excited about this one.
Eppa’s sangria is certified organic and is made up of antioxidant rich fruits including pomegranate, blueberry, blood orange, and acai. One glass of their wine has twice the amount of antioxidants than a standard glass of wine.
The taste test verdict? Loved it. It is smooth, fruity, and refreshing. The perfect happy hour beverage, out on the boat beverage, or just “in need of a glass of wine after a stressful day” perfect beverage.
Eppa is starting to become available in stores (some Whole Foods carry it), but you can also order their product from their website. Of course you must be 21 years or older to order.

September Push-Up Challenge
On with my day….I have a few things to do around the house, some errands to run, and possibly a workout on the agenda.
Which reminds me, I almost forgot to mention that for the month of September, I have made the commitment to doing at least 10 push ups everyday. If I’m feeling more ambitious certain days, I will do more but every day I will complete at least 10. My push-ups are knee style, but I am hoping to build strength again to do normal ones again. Baby steps.

It began Saturday morning. Dana and I hit the gym together (the what?!) and we worked through a back and bicep strength training routine. I left feeling very disappointed because I have noticed how weak I have become lately due to the U.C. and the limited energy I have had.
“But you gotta keep your head up….” and then laugh a little. I was pretty mopey after the gym but Dana cheered me up with this:
My mood improved after that. I know I need to get through this, and will get through this, and I will slowly begin to rebuild my strength. After my little moment, I cheered up thinking about the fun day ahead.
Dana and I headed to my grandpa’s house to visit with him, my mom and dad, and many of other family members who were in from out of town. We were only able to stay for a short while, but I absolutely loved seeing each and every one of them. I miss them all so much.
While we were there I felt the need to explain to them why we were looking all gnarly that day in our 80’s outfits. We were heading to an 80’s themed birthday party…

The day was full of lots of laughs, big hair, neon, Glen Gulia, creepers (Nate and Nate) and great “rad” friends. We had a blast celebrating Stacy’s big day with her. Today is her ACTUAL birthday so…

Sunday
On Saturday morning Dana and I participated in our 3rd annual Minnesota State Fair Milk run. It is a 5k race which takes place just outside of the state fair grounds and starts at 7:45 am.
The weather was perfect. It was overcast, cool, and humid so I felt like my legs warmed up really fast but the cool temperature kept me cool. Duh?
Anyway, it felt like a great run. I am really curious to see our times which haven’t been posted yet. I felt like we were running at a pretty good pace but I’ve been wrong before so we’ll see.
After the race we headed to the great Minnesota get-together, aka The Minnesota State Fair. Those of you who aren’t from MN, the state fair is a BIG deal around here. I frankly don’t think it deserves all of the hype, but I do enjoy going every year.
It’s mostly a food fest, but there are other activities such as carnival rides, farm animals, sky rides, an agriculture building, a health building, etc. I do enjoy checking out a lot of those things, but I can’t handle crowds very well, so the visits are usually short lived.
Dana’s one item that he gets every year is the Pronto-Pup, or a corn dog if you will. I pass on the wiener on a stick.
Since I know we never stay long at the fair, and I have a limited stomach capacity, I try to choose my foods wisely. My first choice was falafel on a stick which I shared with hubs.
Next, was our free malts that we got from the Milk Run.
Mashed potatoes on a stick. These were actually very good. I was craving salty and this was definitely that. It was mashed potatoes, cheese, and bacon, all deep fried. Again, “says the dietitian.” We split these as well.
The last item we wanted to try was the bacon ice cream. The ice cream had a maple flavor and the bacon added a touch of salty bite to the combo. Meh, it was okay. We both agreed we wouldn’t get it again, but were glad we tried it.
Food fest 2012. I’m not proud of what I ate, but it only happens once a year so I know I shouldn’t feel too bad about it.
Sunday afternoon led us to celebrate yet another birthday, this one for my amazing brother Kevin. His birthday was last week but it worked out best to celebrate last night.
We had a very relaxing evening outside where we chatted, gave Kevi his birthday presents…
Ate delicious turkey sliders with chili cheese dip courtesy a la madre…

Kevin loves chocolate and peanut butter just as much as I do, so I decided to make him a chocolate peanut butter cake (inspired by Courtney).
I cheated and used a boxed gluten-free devil’s food cake mix. I baked two round cakes, and made a homemade peanut butter frosting to glue the layers together (don’t think I didn’t taste test the frosting as I was making the cake). It was peanut butter, powdered sugar, milk, and vanilla all whipped together.
I then topped the cake with store-bought sugar-free chocolate frosting and finished it off with chopped Reese’s peanut butter cups.
I completely forgot to snap a photo of the inside of the cake! It was beautiful too. Oh well. Everyone thoroughly enjoyed it. I can’t believe I was able to scarf down a piece of cake after all of the sugar I had already consumed that day. Blah. Dana and I both left feeling Thanksgiving stuffed, but it was well worth it. I loved celebrating with you Kevi! Love you all so much.
What an amazing weekend. Now, it’s time to detoxify my body from all of this extra sugar it’s not used to, and try to give it the rest it needs.
