A Lovely Easter & April Fitness Challenge

Is anyone else recovering from a slight sugar shock from yesterday? Yes, I had some sugar yesterday. I don’t regret it and I absolutely enjoyed it, for ONE day. Now that Monday is here, the candy will hide out until next weekend. At least that’s the plan.

I do not believe in depriving yourself of the foods you love, it is all about MODERATION, but since I am in the last stages of my gut healing, I’m trying to stay clear for now.

Our Easter celebration yesterday was absolutely lovely. My parents, my brother Kevin,  Dana and I all went to 11:00 church service and I loved everything about the service; the music, the atmosphere of all of the happy people, being there with my family, the message, everything.

After church we headed home. The Easter bunny did a great job of filling Dana and my basket with mostly healthy things since she knows we are watching our sugar intake. 😉

It was 12:30 at this point and we were all pretty ravished, but mom had plantain chips and salsa, sweet potato chips and hummus, and shrimp all ready for us to munch on. I really enjoyed the plantain chips.

Once 2:30 pm rolled around, dinner was served. I brought a fruit salad which I found on Pinterest. I wish I could take credit because this bowl was beautiful. It was simply fresh strawberries, blueberries, and green grapes which I drizzled with a honey and lime homemade mixture. I had two bowls of this sweet goodness!

The rest of the delicious fare….deviled eggs, which I have officially decided I need to eat more than once a year because they are so tasty and I love them so much.

Cheesy potatoes….I actually resisted these this year except for one bite to taste! I could have had some but I’m trying to let my body continue to heal and didn’t want to push it with the richness of this dish.

I loaded up on the asparagus! The ham tasted awfully good too and I’m not always the biggest ham fan. NUM.

After dinner, both mom and I were a little antsy, so we went for a quick walk around the neighborhood. It was windy and a little cold but it sure felt good to get the legs moving.

When we returned, I plated the dessert. I made a gluten-free, no refined sugar, Key Lime Pie. It may not be picture perfect, but it definitely tasted GREAT! I will be posting the recipe this week so stay tuned!

Both Easter #1 and Easter #2 were huge successes. I have so much love for my family and I so enjoy spending time with them! I love the holidays!

So, back to that sugar real quick. Up until this point in the day I hadn’t had any processed refined sugar, but when we got home last night, I really wanted some Easter candy from my basket. I had a few piece of licorice and some dark chocolate M & M’s. They tasted very good. I was very excited to have this special treat, but like I said, now that Easter is over, the candy will go away for the week and I will be back to limiting my sugars throughout the week. Next weekend, I might dabble into a piece or two, but we’ll see. I really savored those sweets last night, though. Mmm mmm. I can’t lie and say I didn’t like them, but again I remind you all of my favorite word: Moderation.

April Fitness Challenge

I’m hesitant to make this public and hold myself accountable for this, BUT, I have a fitness goal that I have been wanting to attain since I can’t remember when and it’s about time I gave it a go.

This month, I am challenging myself to do at least ONE UNASSISTED CHIN-UP. 

There, I said it. It’s out there and it’s published. It’s time to start making these dreams come to life!

Easter Celebration #1

I am really enjoying myself this relaxing Sunday. I’m going to keep this short and sweet because I want to continue this day of relaxation, but I wanted to give you a quick update from last night.

We had plans over at Dana’s parent’s house to celebrate belated birthdays for both Dana and his mom, Sue, and also to celebrate Easter a little early.

As always, there was LOTS of delicious food! We started with some appetizers: veggies, almond crackers, and an avocado/edamame/pesto dip which was excellent!

For our main course we had a chicken, shrimp, and artichoke sauté alongside tabouli and homemade almond biscuits (I brought the biscuits). Holy moly everything was so good!

Next up, dessert of course. We were celebrating two birthdays AND Easter afterall. Sue picked up a cake from Wuolett’s Bakery in Edina. To those of you who have never experienced this cake, let me tell you, it is fantastic!

The one she bought was called Princess Torte and it was raspberry and Bavarian cream layered with genoise (egg-rich golden cake) and wrapped in pastel almond marzipan.

It was such a nice evening and now we can say Dana’s birthday celebrations are officially over and Easter celebration #1 was a success!

Frozen Yogurt Cake & Almond Cookies

The snow is coming down here in MN this morning. I can’t say I’m thrilled about it after all, spring begins on Thursday. BUT, I am thinking positively that this is our last snow of the season.

I’m pretty sure Moose is even bummed about the snow and he LOVES snow.

I have a little catching up to do from the past couple of days. On Saturday evening we headed over to my mom and dad’s to celebrate Dana’s birthday. Kev met us there too and the five of us had a Greek feast of a dinner thanks to mom and dad.

They even had Mediterranean-like music playing when we got there. Yes, they’re that cute.

I said I would bring the birthday dessert and Dana had decided he wanted an ice cream cake. He’s talking a homemade creation which really couldn’t be much easier.

At the store I had him pick out what kind of ice cream he wanted and then what cookie. He picked a Moose Track Frozen Yogurt and Oreo Birthday Cake Cookies

How to make ice cream or frozen yogurt cake

Birthday Frozen Yogurt Cake

Ingredients

  • 1 tub of favorite ice cream or frozen yogurt
  • 1 package of favorite cookie (try choosing a cookie that would taste good with the ice cream selection)
  • 1 Tbsp butter, melted

Directions

 

  1. Remove frozen yogurt from freezer.
  2. Line a bread pan with plastic wrap; set aside.
  3. In a food processor combine half of the package or Oreos with 1 1/2 tsp butter. Process until it reaches texture of coarse sand.
  4. Pour crumbs onto bottom of prepared pan and use fingers to press them down into the pan forming the first layer.
  5. Next, scoop all of the frozen yogurt onto the crumb layer; use fingers to pat it down.
  6. In the food processor, add the rest of the Oreos and the remaining butter. Process again, but this time leave it a bit more chunky.
  7. Top the ice cream layer with the last layer of crumbs. Garnish if you like. Place in freezer to set and VOILA you have homemade ice cream cake in about an hour!

 

**If I were to do it again, I would have probably added fun colored sprinkles to the top.

I topped everyone’s cake with some Cool Whip to really add that extra wow factor.

I am still passing on the extra sugars at this point, but everyone else gave this cake rave reviews! It is such a fun cake idea for anyone, because they get to choose exactly what goes into it! I made this other Oreo ice cream cake a while back—feel free to check it out!

After dinner we all just relaxed and chatted, and Abbie could hardly keep her eyes open. She was exhausted from all of the socializing!

Sunday

Happy St. Patty’s Day just one day late! We got real crazy…we slept in until 8:30 and read the paper, cut coupons, went grocery shopping, and get this, we even went to Petco for dog food. Talk about a CRAZY morning! 😉

Sunday mornings are my absolute favorite.

After restocking our fridge I threw myself together a spectacular salad with mixed greens, peas, avocado, chicken, sunflower seeds, olives, olive oil, and a piece of cheese and a Claussen pickle (my favorite pickle) on the side.

We had another family birthday party to celebrate in the afternoon so we got all prettied up and threw on our Get Lucky 7k sweatshirts—mine was from last year and his from this year. How embarrassing if we would have worn the SAME one. 😉

For dinner there were MORE veggies on the menu in the form of Veggie Hash or I like to call it Kitchen Sink Hash. We threw all of the veggies we had into a pan which included zucchini, green bell pepper, onion, broccoli, kale, and black beans. We gave these veggies a good sauté. Then we plated them up with some chopped tomato, avocado, cilantro, cheddar cheese, and topped it off with an over-easy egg.

Once again, this dinner never seizes to please me. It’s always good!

Since I am still watching my sugar intake until I am 100% healed from the UC, I made myself a little treat to help satisfy my slight sweet craving I had last night. I found a recipe off Pinterest for Easy Almond Cookies and were they ever! You can check out the recipe here. The only changes I made were I used honey instead of stevia, and vanilla extract instead of almond. If I HAD almond extract in the house I absolutely would have used that.

These cute little guys turned out well, and best of all they were so easy! Only 5 ingredients. They satisfied my sweet tooth which was what I was hoping for.

I suppose I should get this little lady ready for the day. I’m hoping the roads aren’t too terrible. Chances are they will be fine, it’s the drivers I usually worry about more.

Do Something for You.

Happy Thursday! It’s time to for some normal posts again.

Yesterday morning I had tentative plans to get a run in on the treadmill, but when I started my walk warmup, my hip was hurting and I decided not to press my luck with the race coming up on Saturday. So, I hopped off the treadmill and headed upstairs to my yoga mat. I haven’t done yoga in a very long time and I know I say this every time but whenever I get a yoga session in again, I always remember how much I love it.

I chose a yoga/pilates OnDemand. It was about a half hour and was pretty fast-moving. Afterwards I felt so refreshed, energized, and stretched out. My body must have been telling me I needed that yoga. Now, don’t forget that feeeling! 🙂

For breakfast I pulled out a gluten-free pumpkin waffle from the freezer. I made a big batch of these last month and froze a few of them for a later time and I’m so glad I did!

I microwaved the waffle to thaw it, and then topped it with some peanut butter and a teeny drizzle of honey. I could swear it tasted better this time around! Probably because I didn’t have to do any cooking this time? FYI I took a couple of bites before I took the photo…I just couldn’t wait!

For lunch I had an apple and leftover salad which was made of mixed greens, artichoke hearts, olives, tomatoes, zucchini, parmesan cheese, and olive oil dressing.

The second part of lunch was a banana with peanut butter. Go figure.

Before I went back to work I snapped this photo of Moose because he looked so darn precious. This is his favorite spot to sit and look out the window and snarl at anything that walks by or anything he thinks he sees go by. He’s my watch dog.

I have gotten myself back on this no extra sugars bit now that I am back home and back to reality.

I resisted the Easter jelly beans at work yesterday which was a proud moment for me. There’s something about jelly beans that I really enjoy. It’s not the taste because they don’t taste ALL that great to me, unless they are jolly rancher or starburst jelly beans, but I think it’s the texture. The hard candy coating and the chewy sugary center. It really does something for me. Anyway, I resisted this time.

On vacation I packed one dark chocolate candy bar for Dana and I. Each night we would each have one square for our dessert. Well then things escalated from there. We went to dinner at the Silver Palms and had the most delicious and decadent chocolate cake with coconut ice cream. Then on the plane we got cookies. Then in Colorado we celebrated Dana’s uncles birthday so we had ice cream cake. Not to mention I also nibbled on girl scout cookies, jelly beans, and chocolate.

No one was forcing me to eat any of these things, but I had decided that since it was vacation that I was going to go all out. Well, my gut reminded me why I had decided to get rid of the sugars in the first place. I set myself back a couple of days, but it didn’t take long for me to get back on track and I am feeling much better now. Although, I must confess that I had a few chocolate chips last night out of a trail mix bag last night. But all in all, I am doing a VERY good job of staying away from the sweets for now, until I get back on track with all of my health shenanigans.

For dinner I had a bowl of the veggie soup I made on Monday. I sprinkled some parmesan cheese on top just to give it that somethin’ somethin’.

For dessert I had a few too many dates with peanut butter, and then those chocolate chips. I watched Glee and opened the insane amount of mail we had accumulated from being away; 90% of it was junk of course. No, I do not want another credit card. Thanks.

Have you ever read a book that inspired you to be a better person? While I was on vacation I read the book, The Happiness Project, By Gretchen Rubin.

Gretchen writes about finding true happiness in everyday life. She admits that she is indeed a happy person and happy with her life, but she wonders if she could be “happier.” She spends a year working through happiness resolutions, each month focusing on a new project. Some projects bring her happiness, others leave her feeling the same, but all of them make her think about her life and simple changes that can be made to make her be a better person and make her happier.

She realizes that making herself happy will in turn help to make others happier.

This book struck me big time. All I wanted to do was get home and start making my own resolutions chart and happiness project. So, that’s what I’m going to do. Gretchen provides a free template on her website to help start your own project. I don’t know if I will go as extensively as she did, but I do want to make changes in my everyday life and think that focusing on projects on a month-to-month basis is a good way to stay in check.

Nothing is set in stone yet, but once I do decide on my happiness project, I will probably keep it to myself, at least until after it is complete. There will more than likely be more on this in future posts.

I bring this book to your attention because I feel that all of us deserve to be happy. So often we forget about ourselves and get so wrapped up in our busy lives, that we forget to stop and smell the roses and forget to do something for ourselves purely because we want to. And to do something special for ourselves and NOT feel guilty about it.

This is just something to think about. If you haven’t read her book I highly recommend you do. Who wouldn’t want to be happier?!

Chocolate-Truffle Cupcakes 5

Today, my friends, I present you with: Chocolate Truffle Cupcakes with Peanut Butter Frosting! This recipe is, to say the least, delectably perfect.

Creamy, rich and chocolate-y cupcakes topped with a salty yet sweet peanut butter frosting. The combination is as delightful as it sounds.

Chocolate cupcake dough stuffed with a chocolate truffle and baked until perfectly gooey. Then coated with a luscious peanut butter frosting and a dusting of peanuts and chocolate chips.

Chocolate Truffle Cupcakes with Peanut Butter Frosting (Slightly adapted from Martha Stewart)

Makes 12 cupcakes

Ingredients

– Cupcakes

  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup flour, plus 1/4 cup extra for truffles
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup butter, at room temperature
  • 1 cup white sugar
  • 3 large eggs
  • 1 tsp vanilla
  • 2/3 cup sour cream
  • 12 chocolate truffles (I used Lindt Dark Chocolate)

– Frosting

  • 1/2 cup butter, softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 2 TBSP milk
  • 1/2 cup chocolate chips and/or peanuts, optional toppings

Directions

Preheat oven to 350 degrees and line muffin tin with liners. Combine cocoa, 3/4 cup flour, baking powder and salt in a medium bowl and set aside. With an electric mixer, cream butter and sugar until light and fluffy. Add eggs, individually, beating well after each addition, then mix in vanilla. On low speed, mix in flour mixture in two batches, alternating with sour cream. Pour batter into cups, filling approximately 3/4 full. Next, roll truffles in 1/4 cup extra flour (this keeps the truffles from sinking to the bottom of the cupcake) and push one flour-coated truffled halfway into each cupcake. Bake approximately 20 minutes. Remove cupcakes to a wire rack to cool completely.

While cupcakes are baking/cooling, prepare the peanut butter frosting. Beat together butter and peanut butter until smooth, slowly add in powdered sugar and milk until creamy. Once cupcakes are fully cooled, spread frosting onto cupcakes and top with chocolate chips and/or peanuts. Enjoy!

Grilled Chicken with Artichoke Salsa & Valentine Surprises

Happy Friday! Do your happy dance!

So, I have pretty much weaned myself off coffee in the mornings and instead have been enjoying a cup of kombucha tea (which does also have a tiny bit of caffeine) but I was really wanting a cup of coffee this morning, so guess what? That’s what I had.

I’m going to cut right to the chase from yesterday. I don’t have much to share up until the afternoon. As you know, I am one of the lovey dovey people who celebrates Valentine’s Day. I do agree that “everyday should be Valentine’s Day,” and that we should share our love all of the time, and not just on one specific day, but I also like the idea of a super special day of love.

We don’t go super crazy celebrating but we usually cook up a nice dinner and have some sort of decadent dessert.  Gifts are usually optional or something small.

I haven’t the slightest idea where I found this recipe, but it was tucked away in my recipe book and I was aching to try it. My guess is I had thought about making it last year for Vday?

Grilled Chicken with Artichoke Salsa.

We grilled two boneless skinless chicken breasts seasoned with lemon, salt, and pepper along with a bunch of asparagus stalks. Grilled asparagus is hands-down my favorite way to eat that veggie. It takes on a nice smoky flavor and is OH so good.

While the chicken was grilling I got to work on the artichoke salsa (recipe below). This dish was extremely simple to prepare and turned out so amazingly well.

And kind of fancy looking too. At least fancier than what we’re used to on a Thursday night.

Artichoke Salsa

Ingredients
  • 1 cup artichoke hearts, chopped (I used jarred in olive oil)
  • 1 Tbsp capers
  • 2 Tbsp red onion, diced
  • 2 tsp lemon juice
  • 1 clove garlic, minced
  • dash of dried oregano
  • dash of dried thyme
  • dash of italian seasoning
  • salt and pepper
Instructions
  1. Combine all ingredients and serve on top of grilled boneless chicken breast and asparagus. NUM!

 

Dessert

I had some homemade gluten-free brownies leftover from Tuesday’s work meeting, so I warmed those up for dessert. They were almost paleo, but not quite, so it was a bit of a “treat.”

I was originally planning on making a paleo molten chocolate lava cake, but after dinner I was first of all stuffed, and second of all just simply tired. These brownies were the perfect substitute though. Plus now they are out of the house!

The evening was full of surprises. When I first got home from work, I had a few cards waiting for me. Yes, actually legit cards that came in the mail. It always excites me to get actual “mail!” I was feeling very loved. Mooser even gave me a card. 😉

I sent Dana on a mini scavenger hunt for a few gifts that I had got for him. I love going on those scavenger hunts, so I thought I’d let him have some fun. I think he enjoyed it!

Dana surprised me with my very first Lululemon workout top. Actually my very first anything from Lululemon. That store is so outrageously expensive but holding that shirt I could feel the difference! So soft. I can’t wait to wear it!

As if that wasn’t enough, Dana tells me that he has another surprise for me. He said that he changed a few things on my blog. To premise that, there is a huge list of details I want to change about the blog, but I haven’t figured out how to configure the changes yet, so this surprise actually sounded like something he would have done. I was still a little skeptical.

I sit down at my computer to look at the changes, and he tells me to use the pullout keyboard (which is just a little pull out sliding shelf attached to my desk which is meant for a keyboard for a desk top). I have no idea what he’s talking about but play along and pull out the shelf and guess what was sitting there…

An Apple MacBook Air.

I couldn’t believe what was in front of my eyes. My computer has been on the fritz for a while now, and we talked about how my next computer will be a Mac, but I was thinking we would practically wait for my computer to start on fire before we replaced it. But no, no, I am now an official owner of a Mac.

Needless to say I feel more than a little spoiled. I spent the rest of the evening with my honey trying to figure out the ins and outs with my new toy and watching Modern Family from Wednesday (LOVE that show).

It will definitely take some getting used to but I already feel less stress while working on the blog. Uploading photos is faster because pictures taken from my iPhone are automatically synced onto my computer, there is no lag time due to overheating, it’s wonderful.

Dana outdid himself. Although he said the computer “isn’t a Valentine’s gift, because it was something you needed.” Either way, he spoiled me rotten.

February Fitness Challenge 

Today we enter into our third week of the February Fitness Challenge. I am happy to say I once again met my goal of three strength training activities for the week. Check out my workout log page if you are interested in what I did!

A Test of My Willpower

Happy hump day! I hope everyone is having a good week so far. I’m kind of already ready for this week to be over. Total downer over here, but each day that goes by is one day closer to our vacation, so I am a bit antsy. Not that I usually wish time to go by fast, but in this situation, I sort of do. Wouldn’t you if this was awaiting your arrival?

I don’t have much to show for my day yesterday as far as pictures go but I still have a little sharing and confessing to do.

First, I started my day off with a banana with peanut butter, cinnamon and a light drizzle of honey along with another cup of green kombucha tea. I absolutely WILL not eat this breakfast again for breakfast today. I am challenging myself to something more creative today. Plus, we’re getting low on the pb.

Once I was fueled and did a couple of things around the house, I changed quickly into my workout clothes and completed this arm pyramid workout:

Followed by a couple other arm exercises combined with squats and other glute action. I really only had about 25 minutes for a workout this morning so I was happy I at least got something in.

So, off to work I go. I had a lot of meetings yesterday and given that is so close to Valentine’s Day, there were LOTS of treats.

I did a pretty good job with the self-control at lunch. I plated myself up a few of the gluten-free options along with a big cup of homemade chicken chili.

When the desserts were passed around I passed up the cupcakes and the brownies, and had only two chocolate covered strawberries.

Not too bad all things considered. That was willpower test number one.

Fast-forward to our evening meeting. I had packed a bag of carrots to munch on and tide me over until I got home, but that clearly wasn’t enough (I know better than that) because when the nummy snacks started coming out, my hunger began to takeover my willpower.

I brought homemade gluten-free brownies to share with everyone, so I plated myself up one of those, a bunch of Angie’s White Cheddar popcorn, pistachios, a piece of dark chocolate, a few gummy hearts, and a Take 5 mini candy bar. I enjoyed every single treat on my plate without hesitation. Sugars: 1, Willpower: 0.

I have been really limiting my added sugars and having maybe one piece of dark chocolate about every other day or so, and my body has become accustomed to not a lot of added sugars. So last night was a bit of a shock to my body. I didn’t feel good after I did it either.  My body was not very happy with this surprise. But, I refuse to dwell on it. It was one day. Today is a new day and I can tell you this much, the sweets don’t stand a chance today.

That’s all I have for now. I just needed to “confess,” and I feel a lot better now.

Cabbage Roll Casserole–Give it a Chance!

Happy Saturday you beautifully nutty readers!

My Saturday is off to a great start because I woke up feeling SO much better. I can actually breathe through my nose today which is a good thing since we have plans to meet my mom, dad, and grandpa for breakfast this morning. I don’t know about you but I do enjoy tasting my food. 😉

I’m going to make this short and sweet for you all and focus right on in to dinner last night. After lying on the couch until 3:30 yesterday afternoon feeling completely groggy, I forced myself into my tennis shoes and hit the treadmill for a nice slow walk. The walk did wonders. I felt slightly less groggy and more energized. I made sure to utilize that slight energy surge by preparing dinner.

Dinner was something out of the box, and out of my comfort zone: Cabbage Roll Casserole

I had planned earlier in the week to make cabbage rolls, but kept putting it off since I wasn’t feeling good and the process seemed a little tedious. Then I got to thinking, there’s nothing saying I have to make the cabbage rolls into actual rolls, I could just chop it up and bake it like a casserole. I went with it…

And here is what I came up with! I know cabbage may not be #1 on many people’s list of favorite foods, but give it a chance. I promise you this turned out to be such a great and SUPER healthy dish!

It was comforting, savory and satisfying. Both Dana and I really enjoyed it!

Cabbage Roll Casserole

Recipe type: Gluten-Free; SCD
Ingredients
  • ⅓ lb ground lean turkey
  • 1½ cup onion, diced
  • ¾ cup green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ¼ tsp chili pepper flakes
  • ¼ tsp dried basil
  • salt and pepper
  • 2 cups crushed tomatoes (fresh or canned)
  • ½ jar of no sugar added marinara sauce
  • ½ head of cabbage, chopped into shreds
  • ¾ cup bone broth (chicken, turkey, or veggie broth would work fine)
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a pan on the stove top, brown the meat.
  3. Then add onion and bell pepper and saute for about 3 minutes.
  4. Add garlic, oregano, chili pepper flakes, basil, salt and pepper; stir.
  5. Add tomatoes and sauce and stir. Turn off the heat. Add cabbage and stir to combine.
  6. In a 9 x 13 oven-safe baking pan, pour cabbage mixture and spread evenly in pan.
  7. Pour broth over cabbage.
  8. Bake covered for 45 minutes and then remove cover and bake for an additional 35 minutes.
  9. Enjoy this delightfully healthy dish warm!

The rest of the evening was spent relaxing on the couch and watching the majority of the movie Valentine’s Day which was on TV. Of course I naturally got into it since it was the definition of chick flick and it has a great cast. We had to DVR the end of it though because I couldn’t keep my eyes open any longer. Stay awake until 10:30? Not a chance when I’m sick.

Moose had a relaxing evening as well.

The evening was complete when Dana came home from a run to CVS for cold medicine for me and also brought home one of my favorite dark chocolate bars. I’m only allowing myself one piece a day at max. I can’t believe my will power with sweets these days. It’s incredible how taking yourself off of sweets can change your will power for them so drastically. I like having control. Now I have to work on my peanut butter and date control.

Blueberry Lemon Bread & February Fitness Challenge Week 1 Recap

I’m finally nearing the end of this cold! By tomorrow I should be 100% back to normal.

After work yesterday I snuggled into my sweats and relaxed on the couch. I managed to eat my way through a good portion of this bag of trail mix while I vegged.

Eventually I got tired of sitting around and put on a very slow and easy breath and stretch pilates On Demand. It felt great to stretch and move a little bit because I’ve been pretty inactive the past couple of days. I also managed to get my 1 minute plank-a-day in.

Speaking of plank-a-day, today ends week 1 of my February Fitness Challenge. My goal was to complete 3 strength train type workouts throughout the weeks during February as well as at least a 1 minute plank every day. Considering I was sick this past week, I am proud to say I still met my week 1 goal.

Strength Training Activities:

  1. Jillian Michael’s 30 Day Shred plus plank
  2. This leg workout with dumbbells plus plank
  3. A 30 Day Abs workout (from last month’s fitness challenge)

I’m hoping to make it to the gym this week and work it out there a bit. I haven’t been making too many appearances there lately.

Also, I NEED to start running again because I am officially registered for a 7K on St. Patty’s Day which is on March 17th. I am hoping the weather starts improving so I can make it outside, otherwise the treadmill will have to do. It’s time to get these legs-a-movin’!

Blueberry Lemon Bread (Gluten-Free and SCD Friendly!)

This may sound strange to some, but when I am feeling slightly under the weather, I enjoy relaxing in the kitchen, and baking up something tasty and comforting. So, that is exactly what I did last night.

How does blueberry lemon bread sound? It’s made with almond flour too so it is 100% gluten-free! Check it out.

Blueberry Lemon Bread
Recipe Type: Gluten-Free, SCD
Cuisine: Breakfast
Ingredients
  • 2 1/2 cups almond flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup applesauce
  • the juice of one lemon
  • the zest of one lemon
  • 1/3 cup ripe banana
  • 1/4 cup honey
  • 2 eggs
  • 1/2 tsp vanilla
  • 1 cup blueberries
Instructions
  1. Preheat oven to 350 degrees F. Lightly coat a standard bread pan with cooking spray.
  2. In a small bowl, mix together flour, baking soda, and salt.
  3. In a large bowl, beat together applesauce, lemon juice, zest, banana, honey, eggs, and vanilla until well mixed.
  4. Add flour mixture into applesauce mixture, stir to combine.
  5. Stir in blueberries until just incorporated (do not overmix).
  6. Pour batter into prepared pan.
  7. Bake for 55 minutes or until toothpick inserted into center of loaf comes out clean.

The end result is a not-too-sweet blueberry bread with a subtle lemon flavor. Eat it plain, or toast it up and add a small smear of butter, peanut butter, or honey.

A Typical Day of Meals & Snacks From My Childhood

Happy Thursday to you all. I hope everyone is having a good week. I’m still fighting to feel well today. I got nearly 9 hours of sleep last night so that will hopefully help me heal faster. Sleep is so powerful.

Yesterday I went into work, fought through the morning but then felt so miserable that I ended up going home in the afternoon. I planted myself on the couch and that is where I stayed all afternoon and evening minus getting up to get food and drink.

I hesitate to even share my eats yesterday because they are not the most appealing or exciting, but I’ll do it anyway.

Breakfast was an old favorite of Parkers Farm peanut butter, banana, cinnamon, and a light drizzle of honey.

Lunch was seasoned bone broth with chicken and carrots, applesauce, and raw carrots.

I spent the afternoon trying to nap which was turned out to be an unsuccessful attempt  (why is it so hard for me to nap?!), watching Food Network, reading, and catching up on blogs. Pretty much I sat on my rear all afternoon and rested.

When dinner rolled around I was very hungry, but had no clue what I wanted. Eventually, with the help of Dana, he made up a plate of roasted broccoli with parmesan with a piece of cooked turkey deli meat with an egg on top. It was very random but it ended up being a nummy combo.

I spent the rest of the evening watching an episode of Glee that I had recorded, Whitney, and Modern Family. I love those shows oh so much.

Switching gears now…

After reading a post from the blog A Dash of Meg, who wrote a post about what a typical day of meals and snacks looked like for her growing up, I thought it would be fun to walk down memory lane as well. Shall we?

A Typical Day of Meals & Snacks From My Childhood

Breakfast

In the morning I would stumble down to the kitchen and pour myself a bowl of cereal with  milk or make a warm bowl of Cream of Wheat. Mom always had the cupboard stocked full of good cereals, but some of my favorites were Cinnamon Life and Honey Nut Cheerios. Num! Many times I would sit next to my mom while she read the paper and crunch away at my bowl.

A bowl of cereal now with no additional protein on the side (besides the small amount of milk on the cereal) definitely wouldn’t tide me over very long any more these days, but cereal does make a great snack or you could pair a bowl of cereal and banana slices with a protein rich egg on the side and call it a more well-rounded meal.

I don’t recall snacking very often between breakfast and lunch, so when lunch time rolled around, I was always very hungry. Sometimes I would buy a juice from the soda machine, but not too often.

Lunch

Most of the time I preferred to bring a bagged lunch aside from those random days when I chose to have the taco salad bar or italian dunkers. It’s funny how I always seemed to have a tummy ache after eating the white bread and cheese loaded italian dunkers. I have learned so much about my body and health since then!

Mom made my lunch for the longest time which I am so thankful for, and my usual comfy tummy lunch was peanut butter and jelly on whole grain bread, baby carrots, an apple or a banana, and then usually one little treat like a cookie or fruit snacks or pudding.

Snacks

After school I was always ready for a snack. Often I would go over to my aunt’s house (Betsy’s mom and dad) and hang out there for a while. Betsy and I would practice our dance steps, and then we would have a snack. My favorite afternoon snacks at her house were freshly popped popcorn and graham crackers with peanut butter and mini chocolate chips!

At home, my favorite snacks were probably another mini bowl of cereal or pretzels. I was quite the carb loader back then. 🙂

Dinner

Later in the evening I would either go to dance and then come home and eat dinner, or eat dinner and then go to dance. As I got older I had more and more classes. Mom did a great job of having dinner ready for all of us, even though we were all going out the door here and there to practices, classes, study groups, etc. If someone wasn’t home for dinner, mom or dad would always plate up a serving and put it in the fridge for when they got home.

Some of my favorites were taco night, spaghetti, fajitas, and lasagna.

But truly, I loved everything my mom made. I was never a picky eater and still am not to this day!

In the evening on special occasions, mom would whip us up a batch of orange julius which I believe was made with orange juice concentrate, milk, vanilla, and ice. I’m pretty sure that was it but don’t quote me on that.

It was such a tasty treat and I always got so excited about them. I may need to try to recreate that bad boy.

So, there you have it! I was definitely a carb queen. I needed a lot of energy and brain fuel to get me through the activities of the day, and still do of course, I just get it in different forms now.

I remember many “tummy aches” growing up. I wonder if they can be attributed to dairy products and gluten? It is quite possible I guess. I remember having to plug my nose in order to finish my milk. My mom spent a lot of time researching gastrointestinal problems and we tried many different approaches to get me to feel better. At 12 years old I was diagnosed with Ulcerative Colitis.

It’s all very interesting to me. I am learning more and more about myself every day and I continue to be amazed by the human body. It’s a good thing I decided to become a dietitian! Now my mom (who went to school for nutrition as well) and I really have good nutrition conversations.
