A Reminiscent Run

Yesterday was an all-around great day. The day began with a relaxing cup of coffee and banana with peanut butter for breakfast. I suppose I could say I am officially in a “rut” with the pb banana. I haven’t changed up breakfast for a good 1-2 weeks now, but I do still love my pb and b!

Mid-morning I swung by Trader Joe’s to pick up a couple of goodies as well as Macy’s in search of a swimsuit for Turks and Caicos. It’s not that I necessarily need another swimsuit it’s just that I would really enjoy another one. I wanted to look at Macy’s because I still have birthday money there and that would have worked out perfectly, but they didn’t have too many options yet. I did find one on Victoria’s Secret website that I like, but I haven’t been able to commit yet. We shall see.

For lunch I met up with my dear friend Kalley at People’s Organic Cafe per Kalley’s recommendation.

Just as I had suspected, the menu was stellar, stacked with healthy and veggieful dishes. I was in my element. She knows me well!

I went with the “Really Greek” salad: organic romaine, roasted tomatoes, quinoa tabouli, marinated chickpeas, cucumber, olives, feta and lemon basil dressing.

It was a really good decision (ha-ha). I loved every bit of it.

My lunch with Kal flew by all too quickly. I had so much fun catching up on life, reminiscing a bit about the past, and realizing how far I have come with this beautiful lady; about 13 years! I can’t wait to see her again.

I would highly recommend People’s Organic to anybody who enjoys fresh organic, healthy food. It is slightly pricey but that is only because everything is organic. I promise you it is totally worth it. Besides salads they also have sandwiches, wraps, soup, and amazing looking desserts.

I dressed in my running gear at lunch for a reason…after lunch I had plans to run the streets of the neighborhood where I grew up. I was in dire need of a change of scenery and the last time I ran this neighborhood was last late winter perhaps (?), so I thought it would be a welcomed route.

It wasn’t my easiest run but it sure was a fun one. I reminisced the entire time. Every new street I ran by literally brought back so many memories.

I passed by my old house, Betsy’s family’s old house which was just a block away (which explains my closeness to the family as I was there all.the.time.), and about 5 houses of families I babysat for.

I ran on the sidewalk where I would always tell my mom I was thirsty towards the end of our walks. She would tell me to think of biting into a lemon because it makes your mouth salivate and that would be enough to get me home. I remembered our many walks together; reciting state capitals, showing her my new dance steps, singing songs, we have so many wonderful memories.

I passed by “the elephant tree” named because it clearly looks like an elephant. 😉

I passed by the “picnic tree” where Steph, Betsy, our friend Katie, and I would pack lunches and bike to eat lunch under our favorite tree.

I passed the ice rink where I spent many winters learning to ice skate…

ice rinkEvery single step of this run was literally a run down memory lane. Aside from the fact that it wasn’t my “best” run physically, it was sure a great mental run!

Once I got home, we took Moose to the dog park to let him socialize with some buddies. He was in quite the “loving” mood. We had to keep a close eye on him. If you ever are in need of a good chuckle, go to a dog park. Watching the dogs interact is one of the funniest things.

After the dog park I completed my third session of the Abs Challenge. We are now on to week 2!

Dinner was a favorite of ours: veggie hash with a runny egg on top. I pulled whatever we had in the fridge/freezer which included broccoli, mushrooms, onion, leftover Santa Fe roll filler, bell peppers, and then topped the sautéed veggies with shredded cheese, tomato, cilantro, and an over-easy egg. Perfection.

We brought out the snorkel gear last night to make sure everything still fit and was ready to go for our vacation. I feel like it is a lot sooner than the end of February based on my excitement level but considering how time flies, it will be here before we know it.

I am in the process of working on a meal plan for the week since we will be doing our own cooking in our kitchen. Once I get that set up I will share with you all!

Baked Santa Fe Spring Rolls

Hi there my loves! I hope everyone had a wonderful weekend. I have some catching up to do so here we go….

Saturday

I cracked open the Parkers Farm Crunchy Honey peanut butter and let me tell you, I was in heaven. The slight sweetness of the honey mixed with the crunchy and smoothness of the peanuts paired with a good ol’ banana made me one happy little girl.

After breakfast I hopped on the treadmill and did one sweaty and very nonboring routine:

  • 10 minute walk to warm up
  • 1 mile run at 6.0 mph
  • 2 minute walk at 4.0
  • 1 mile run at 6.5
  • 2 minute walk at 4.0
  • 1 mile run at 7.0
  • 10 minute recovery walk

I was really sweating after this one and the best part was it went by very fast.

After the run I completed my second session of the Ab Challenge circuit. I’ll be completing my third session today so that I reach the weekly goal of 3-4x a week. Tomorrow begins the second week with a new ab workout. I’m loving it.

I wasn’t very hungry for lunch but knew I needed to eat, so I whipped together a smoothie with Jay Robb’s chocolate egg white protein, almond milk, kale, strawberries, half a banana, and blueberries. Very satisfying.

Then I got to work on what I love doing oh so much…experimenting in the kitchen. Later in the afternoon I had plans to go to my mom and dad’s for dinner. They were going to be making chicken and I told them I would bring a salad.

My wonderful aunt introduced me to a deli-bought salad couple of weeks ago that I absolutely adored, and I had decided I needed to try to recreate it. The salad she had was made with chickpeas, but I wanted to use black beans instead. You could definitely substitute with chickpeas if you would like.

Here is what I came up with!

Ingredients
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 cup bell peppers, diced
  • ⅓ cup red onion, diced
  • 1 green onion, diced
  • 2 Tbsp. cilantro, chopped
  • Sauce:
  • juice of ½ of a lime
  • juice from ½ of an orange
  • 1 tsp. red wine vinegar
  • salt and pepper
Instructions
  1. In medium bowl combine beans, peppers, onions and cilantro.
  2. In a separate small bowl mix the sauce.
  3. Pour the sauce over the bean mixture and stir gently to combine.
  4. Serve cold as a salad or with corn tortilla chips.

I snacked on a small handful of Driscoll’s blackberries in the afternoon. I realize now how much fruit I ate that day!

Sunday

I was a cleaning machine in the morning not to mention we hit the coupon jackpot. I swear the coupon books (all four of them) were made specifically for me. There were coupons for so many things I actually use. I was psyched.

I headed to the treadmill again on Sunday this time for a long walk (4.0 pace). I walked for about 50 minutes while watching who knows what t.v. shows. Okay, I watched the Kardashians. Guilty pleasure. I also completed my 1-minute plank from the challenge.

Dinner:

I used the leftover bean salad to make Santa Fe Spring Rolls! I added about 3/4 cup of corn and 1/4 cup of shredded cheese into the black bean salad recipe.

The spring rolls I used are made from rice flour, water, and salt. They come in a round package and are very hard. To soften them you simply take one and turn it in a bowl of warm water. It softens right up and is pliable to work with.

Santa Fe Spring Rolls:

Step 1: Preheat oven to 375°F and prepare a baking pan with parchment paper. Once rice paper is pliable, place on flat surface and spoon in bean mixture just off-center.

Step 2: Fold up bottom end of paper to cover mixture.

Step 3: Fold in both right and left sides of paper.

Step 4: Gently roll up the paper into a roll and place on prepared baking pan and spray the tops with olive oil.

Here’s the kicker…since this was my first time ever working with rice paper, I had no idea how long to bake these. We baked the rolls for about 20 minutes and then switched the oven to low broil where they sat for another 10 minutes. Since the inside did not need to be cooked for any reason, our biggest intention was to crisp up the rice paper.

If I were to do it again I would still probably bake it for 20 minutes, and broil for 10, but I would flip the rolls half way through the broiling process to crisp up both sides.

But anyway, the result was a very tasty sinless meal. I served the rolls with a side of Parkers Farm mild salsa.

They were definitely very crunchy too! This was a fun change of pace meal for us. BTW before I prepared these rolls I devoured a load of broccoli and hummus, so that was part of my dinner too.

The rest of the evening was spent being pretty lazy on the couch. I made myself a bowl of FAGE 0% fat Greek Yogurt with fresh Driscoll’s strawberries and blackberries.

It was a nummy day!

30-Day Abs Challenge & Vacation Plans

Howdy! Happy weekend to you all. Did everyone have an enjoyable Friday?

Like many of you, my Fridays at work at “casual.” I wish that meant I could wear sweats to work but it’s not that casual. Jeans will do though!

Lunch was not captured in photo but I had a bowl of leftover veggie soup, carrots, an apple, and a piece of dark chocolate from a lovely co-worker. We call dark chocolate our “vitamin” so if one of us was looking for a piece of chocolate we will ask the other for a vitamin. We love our daily dose (moderation, moderation moderation!).

After work I snacked on a handful of blackberries and 2 dates with peanut butter. Then I got movin’. On Sunday, I accepted a physical challenge (this brings me back to the show Double Dare–anyone else?) through Challenge Loop. The challenge is being put on by Jen Morgan and is called….

30 Day Abs Challenge

Each week for the month of January Jen posts a new workout and you must complete the workout 3-4x a week. Here is the first week’s challenge:

On the “off” days she encourages everyone to do a 1-minute plank. Besides the fitness aspect of the challenge, she also promotes the importance of clean eating in reaching your health and fitness goals.

In my entire life I have never had “abs.” When it comes to ab work I tend to get extremely lazy. I’ll do “core” work after some cardio exercises, bust out a few sets of the same move and then be done. I’ve never been consistent enough and have never given it a fair chance to see results. This is why I signed up for the challenge.

It was totally free. The stipulations are you comment on the Challenge Loop site each time you complete one of their workouts and you must post 8 times in order to be entered into a contest to win a copy of Women’s Health Big Book of Abs. The book isn’t my motivation, building confidence in my appearance is.

After 1 month, I shall see my progress. I finished my first set yesterday and I was really struggling through it. I hope I will continue to feel my core strengthening as I progress through the month’s exercises.

What’s REALLY motivating me to get moving and get my body in tip-top shape is knowing that I will be in a bikini in less than two months. Dana and I booked a vacation to Turks and Caicos for the end of February!!!

Turks and Caicos is a little exotic island just north of the Dominican Republic and Haiti and east of Cuba.

I am literally getting more and more excited by the second as I write this post! We decided on the end of February because that is usually the time that I start to get a mild form of the winter blues. Minnesota winters are very looooonnnnggg so having a wonderful trip like this to look forward to really helps to get you through!

Instead of a hotel we are staying in a villa—-so basically our own little home. We decided to go that route because 1. It was about the same cost as staying in a hotel and 2. It is complete with a full kitchen so we can make all of our meals, therefore hopefully keep my tummy feeling semi-normal.

It’s the same story each time we got to an all-inclusive resort, I end up eating way too much food namely desserts. Not that we won’t stay in an all-inclusive again, because we will, but this will be a nice change of pace. We will bring some of our own groceries which are non-perishable, and then purchase fresh fruits, vegetables, and seafood while we are there.

The resort supplies us with 2 stand up paddle boards which I have been so anxious to try!

Anyway, I could really go on all day about how thrilled I am about this, but I will stop. I feel very lucky to have the opportunity to go on this trip with Dana. It will be a very relaxing getaway for us. I am planning to pack lots of books, games, and peanut butter!

Back to reality again…dinner’s this past week were all pre-planned. I wrote them all out before we went grocery shopping and stocked up on all necessary ingredients. This made evening meals SO easy. I really need to start planning more often.

Tuesday: Bean burritos—this one was actually spontaneous

Wednesday: Vegetable Soup

Thursday: Buffalo Chicken Salad

Friday: Turkey burgers with grilled onions, brussels sprouts, and broccoli

After dinner we took down our Christmas tree and rearranged our living room back to normal. As much as I LOVE Christmas, it feels good to be moving on now and starting the fresh new year.

I also munched on highly addicting Chex mix that Dana made…

Low-Fat Vegetable Soup in the Slow Cooker

It’s my favorite day of the week! HAPPY FRIDAY! I have a very low key weekend ahead of me and I am perfectly okay with that.

I have a recipe to share for you that was inspired by Courtney from SweetToothSweetLife. She made a veggie stew which looked spectacular and I wanted to try something similar. I made a few changes and am pretty darn happy with the results!

Into the crockpot on Wednesday morning:

  • carrots
  • parsnips
  • onion
  • garlic
  • green bell pepper
  • celery
  • tomatoes (frozen from garden!)
  • cannelini beans
  • chicken broth
  • italian spices
  • garlic powder
  • salt and pepper

I set my favorite piece of kitchen equipment, aka the crock pot, on low for 8 hours during the day.

For lunch: Chicken breast with leftover refried beans, melted cheese, salsa, and avocado. This combo was just ‘meh’ to me. I didn’t LOVE it, but I did like that it was protein packed. I’m just more of a bean, Greek yogurt, egg, or peanut butter protein loving kinda gal.

I also ate a big baggy of carrots and a pear for dessert.

After work I changed into my workout clothes and went to the living room to work my arms and back with the resistance band. My knees were hurting pretty badly after the race so I wanted to keep it low intensity.

Once dinner time rolled around I tested the flavor of the soup, added a touch more salt and pepper, and ladled up two bowls for the hubby and myself.

I topped the veggie soup with parmesan cheese…

And thoroughly enjoyed this soup. I went back for a second bowl too. It’s warm, hearty, veggie-filled, low-fat, and DELICIOUS.

Low-Fat Vegetable Soup in the Slow Cooker
Print
Ingredients
  • 2 parsnips, peeled and chopped
  • 2 medium carrots, peeled and chopped
  • ½ bell pepper, chopped
  • ½ medium onion, diced
  • 2 garlic cloves, minced
  • 2 cups white beans
  • 1½ Tbsp Italian seasoning
  • 2 tsp garlic powder
  • 1 bay leaf
  • 1¼ cup chicken broth
  • 2 cups diced tomatoes (canned tomatoes would work fine)
  • salt and pepper to taste
Instructions
  1. Place all ingredients into crockpot. Cover and set on low for 8 hours. Season with salt and pepper to taste. Top with parmesan cheese. ENJOY!

 

Mooser is just getting over an outer ear infection which included an antibiotic treatment as well as ointment in his ear daily. He quickly learned to hate the ear drops and got all too smart when it came time for them.

I thought this picture was hysterical and really captured his hate love for it!

Thursday

Thursday was a pretty ordinary day around here. I went to work, went to the gym after work (elliptical, push-ups, and core work), came home, made dinner.

I went the easy route again with dinner: Buffalo chicken salad with green onions, celery, feta cheese, and light ranch dressing.

So spicaaay! I am realizing that the older I get, the more sensitive I become to spicy foods. Is that weird?

I am debating whether or not to get a workout in at some point today. My knees are still very sore. I’ve been icing them daily but they must not have been too happy with my cold run the other day because they are still aching. I’m pretty sure my body is trying to tell me to rest but I’m having a challenging time listening to it because it’s the new year and I really want to get back into a solid workout regime again. I will see how I am feeling this afternoon and then decide.

A Healthy Start to 2013: Polar Dash 10K

I am very excited to recap on my run from yesterday so I am not wasting any time today.

New Year’s Day (yesterday) I got up bright and early to eat my usual banana and peanut butter pre-run breakfast and sip on a half a cup of coffee. I laid out all of my running gear the night before like I always do, I even pinned my number on my shirt and tied in my time chip to my shoe.

My nerves took over temporarily while thinking about the frigid temperatures, and I started to second guess if I had the right amount of clothes and layers on. On the ride over the thermometer read -7°F. The last long run we did outside it was 9°F outside. That’s a big difference! Dana reassured me that what I had on would be just fine and eventually I came to the realization that yes, I would be fine.

We picked up my brother Kevin and his friend Jeremy (who ran the half-marathon with us in June) and drove to St. Paul. We parked and took the shuttle over to the starting area.

We all did the bathroom thing then headed over to the starting line. At this point the temperature had probably crept up to a whopping -4°F. You had to keep moving to keep the circulation flowing so everyone was jumping, running in place, stretching, and trying to stay warm. This was the hardest part of the whole race for me. From the time it took for us to leave our car in the lot and head to the starting line was about 25 minutes, and my toes were just not having it. They were starting to go numb. All I wanted to do was start running! I have never wanted to start running so bad!

Once the race began and our wave took off, the toes were still feeling pretty immobile, but at about mile 2 they were feeling fine. I ran next to Dana, Kevin, and Jeremy the whole race (minus the very end when K and J took off) which made it so much fun. Jeremy wore an afro wig and crazy 80’s shorts with a fanny pack and got all the runners pumped up and was highly entertaining. One girl even came up to him after the race and told him she was keeping an eye on his afro the whole race and PR’ed because of it!

Another form of entertainment was seeing all of the runner’s iced over faces. It was especially hysterical when men had big beards because the ice completely forms around the beard and turns it white. We all looked like we should have been in some sort of Christmas movie.

Between the entertainment and running with the three boys and keeping each other company, the race flew by. Even though the temperature was sickly cold, there was no wind so the run actually didn’t feel too cold. Dana was right, I had worn the perfect amount of clothes and layers. It’s the same thing I wore on this training run except I wore a wicking  thermal insulated head band instead of a hat.

I felt like it was one of my easiest races actually (albeit not one of my fastest). I finished the run in 1 hour and 37 seconds. I was hoping to get an hour or less, but that’s alright. I’ll blame it on the very slow first mile due to a large mob of runners. 🙂 I am still just very proud I finished a race in sub zero temperatures.

This was definitely one of the most fun races I have done too. I couldn’t believe all of the die hard Minnesotans who were out there running and out there cheering for the runners! I am so proud of my state.

Post-race the wonderful volunteers were handing out waters, goodies bags with bananas, salted nut rolls, and chips, and best of all HOT CHOCOLATE! I don’t mean any ordinary hot chocolate, this was like super chocolatey totally awesome hot chocolate. It tasted like heaven in my mouth. What a fun way to end the race!

A little different from our group picture post half-marathon in June. Ha ha!

Besides the 10K, there was also a half-marathon and a 5K. The Polar Dash was put on by Team Ortho. I have raved about their races and the organization of the races in the past, and this one gets the same credit. The volunteers are so friendly, there is never a moment when you are unsure of where you need to be, they are right there for you if you need them, and they help you have fun and enjoy your races.

The Polar Dash race on January 1st was the perfect way to kick off a healthy new year! I felt fabulous!

We were all very excited to warm up and “thaw” in the car ride home.

Immediately after walking in our front door I turned the heat up and hopped in a hot shower. I got into my coziest fleece pants and plopped myself on the couch for the majority of the day. I think the combination of the cold run and my body working hard to regulate my body temperature coupled with the fact that I slept terribly the night before set me up for a super drowsy day.

I did manage to dress the pup up in Polar Dash gear. It’s always good for a laugh or two. What a good sport.

I was extremely hungry for lunch but had no ambition to make anything, so I snacked on some freeze dried salted edamame for some quick fuel and protein. These babies pack 12 grams of protein in a half a cup. They aren’t out-of-this-world fantastic tasting, but I do enjoy them and they are a healthy snack, and especially a good snack to pack if traveling.

Eventually I rounded up enough energy to make myself a healthy salad. It’s nothing you haven’t seen before but it did taste pretty darn good.

A kajillion snacks happened in the afternoon. I had a bottomless pit of a stomach yesterday. I snacked on almonds, craisins, carrots, a banana, almond crackers, peanut butter. My appetite was insane.

Once dinner rolled around we were both still feeling pretty unmotivated, so we opted for easy. I found a can of refried beans in the cupboard, heated them up with some Parkers Farm salsa. I topped the beans on corn tortillas with shredded cheese, corn, tomatoes, cilantro, and some more salsa.

So simple and so delicious.

I did manage to prepare a meal for the crock pot that will be cooking all day today. I hope it turns out! I’ll let you know.

More Lobster, Crab, and Shrimp Please

HAPPY NEW YEAR! I don’t know about you but I am feelin’ SO good in 2013 so far. 🙂 This morning we finished the Polar Dash 10K in St. Paul. It was a blast! Look out for a recap coming your way shortly.

First, let’s talk some New Year’s Eve business. Guess what we made a couple of days ago?! Two loaves of nutty gluten-free bread! Although we were a little short on the Greek yogurt so had to use 1/4 cup of almond milk. I actually think it turned out better this time!

We visited some friends in the morning. It was great catching up and visiting and playing charades with the kiddos. 🙂 I enjoyed a Lime Perrier sparkling water on the way. I liked it a lot, but not as much as the grapefruit flavor.

Lunch was a bowl of fat-free cottage cheese with peas, tomato, avocado, pepper, and chia seeds and it was VERY good.

Mom and dad stopped over in the afternoon to say hi and wish us a Happy New Year.

I wish seafood wasn’t so expensive because I enjoy it oh so much. It was slightly sweet and buttery and tender. LOVE IT.

We finished off 2012 watching the movie New Year’s Eve (I know, very cliché of us) and sipping on some hot cocoa. We stayed up until around 11:00 so we were able to see the ball drop in New York. Then it was time to get some shut-eye before our big race in the morning.

Super crazy NYE 2012, right? It was the perfect.

I am going to continue relaxing on the couch in my big comfy fleece pants and soak up every last bit of Christmas vacation. Tomorrow, back to reality.

I am very excited for 2013. It is going to be one heck of a year. Catch up with you all very soon!

10 Things I Learned in 2012

Happy New Year’s Eve! Did everyone have a good weekend?! Mine ended with a Vikings’ football win. As much as I’ve neglected to watch them all season, I really get into the games especially at the end and if they’re doing well. Yes, I’m a fair weather fan. I’ll admit.

I guess I can rewind backwards from Sunday to Saturday since I started with Sunday night football. Sunday was pretty quiet. We ran our errands and seriously hit up the Target after Christmas clearance aisles. Dana’s already talking about putting the Christmas lights back up next year. 10 1/2 months to go!

We cleaned the house just to tidy it up again and then I headed over to mom and dad’s to watch the game and hang out. I stayed until the 3rd quarter or so then finished the game at my house with Dana and his dad. It was a nail-biter!

Saturday

We were feeling ambitious on Saturday. We started off by suitin’ up for a 3 mile outdoor run. This time the thermometer read 13 but said it felt like 3°F. My legs really don’t react well to this cold weather and I’d be lying if I said I wasn’t the tiniest bit nervous about it, but like I said, I need to remind myself….

It doesn’t matter how fast I go, just go. Just finish.

It’s as simple as that. I would really like to enjoy myself too! 🙂

After our run we start tackling our winter project list which included repainting our living room and creating another accent wall with some leftover paint we had from this wall. Over the past two years it got really nicked up from Moose’s toys and bags rubbing against it, etc., and needed a refresher.

I know it doesn’t look like much but it FEELS SOOO GOOD. You can sort of tell that the wall with the clock is a cocoa color. It makes the room look larger and more homey. I love it. After our 3 hour paint job, we showered up and got ready for dinner out…

At Roasted Pear. We had bought a Living Social deal for $20 to get $40 worth of food or drink and decided it was the perfect night to use it.

My dinner order was very non-Melanie-like. I ordered the petite filet with french fries. The chance of me ordering a steak is like 1 in 100 coupled with the choice of french fries over a healthier option….very rare. They both sounded good to me though, and I though what the heck?!

And I didn’t regret my decision. It was very good! We finished off our night out with a shared hot fudge sundae with a cherry on top.

And then went home to our pooch who was waiting to dance with his mama. 😉 Not really, but he was a good sport!

Since it is the last day of 2012 I wanted to put together some type of recap from the past year. I decided to make a top 10 list of things I have learned in 2012. It can be blog related, life, health, whatever. I just thought it would be fun. So here it goes…

So maybe I didn’t learn all of these things this past year, but I was definitely reminded of the importance of each and every one of those statements. I am so looking forward to a very happy, healthy and “lucky” 2013.

I will be kicking my 2013 off with a 10K run; what better way to start it off! Happy New Year my beautiful friends! I love you all and cannot thank you enough for supporting me and accepting me for who I am.

Lentil Fajita Salad

Hola mis Amores! How is everyone doing? I am great. I just finished off a 3 mile run outside with Dana and Moose. It was basically brutal again because of the extremely cold temperatures, but we still finished nonetheless. The plan for the 10K on January 1st is not to worry about time and instead just remember to try to have fun. The goal will be to simply finish.

Now I am sitting on the couch in warm sweatpants, drinking a cup of coffee to warm up and we are going to er-er-er rrreewinnndd to yesterday.

Friday

Mark this on your calendar…I went to the gym yesterday! I eased my way back into the gym routine by cardio’ing 20 minutes on the elliptical, 10 minutes on the stair-stepper, and 5 minutes on the row machine. I then finished with some core work with the Bosu ball.

I MUST get back into strength training again because I know how fabulous it makes me feel when I actually do it.

I am getting back on the healthy eating train for sure. Lunch was a pretty typical Melanie salad full of dark greens, olives, peas, sunflower seeds, asparagus and Newman’s Own Lite Honey Mustard dressing. My fav. There is definitely something about olives, peas, and sunflower seeds on salads that I enjoy very much.

After lunch I dove into one of the most un-fun tasks of all time….sorting through the sock drawer. It had turned into one giant heap of socks and drove me crazy every time I had to go find a matching pair, so I made yesterday a mission organization sock drawer.

I did make it more fun by blaring the tunes and dancing around like a little girl.

I cracked open one of my new cans of Perrier sparkling water. I went with the grapefruit flavor and I truly enjoyed this drink. It was so refreshing, with a perfectly subtle grapefruit flavor, and the can was just my size. This definitely gets a thumb’s up.

For dinner I cooked up a batch of brown lentils: combine 1 cup of lentils and 4 cups of low-sodium chicken broth (you can use water instead if you would like) in a medium pan on the stove. Bring it to a boil, cover and reduce heat to low, and simmer for about 20-25 minutes. Then drain the extra liquid off and set the lentils aside.

In the same pan I sautéed a half of a large onion and a half of a green bell pepper. I added in some homemade low-sodium fajita seasoning. Once the veggies were sautéed, I added in the lentils, added more seasoning, and let it all warm through.

In the meantime I prepared some quick guacamole: one avocado, one Roma tomato, cilantro, and pepper. I plated up two heaping mounds of dark green lettuce, followed by the warm fajita lentil mix, then some grated cheese, guacamole, and lastly I dressed the whole salad with Parkers Farm Mild Salsa.

After dinner Dana and I grabbed a cozy blanket, turned on the Christmas tree lights, planted ourselves on the couch, and watched the movie, “Eat, Pray, Love.” I read this book a couple of years ago and have been wanting to see the movie since it came out. Lo and behold Target had it on sale for $4.50 and I just so happened to walk by the rack and snag it.

When they make movies from books, 9 times out of 10 I prefer the book (I prefer my own imagination apparently :wink:), but this time I would say I enjoyed both the book and the movie equally. They did a really great job with portraying the characters in the book on film.

Dana and I split a super juicy amazing pear that was the size of a softball.

It was the perfect and healthy way to end the day.

Mine is usually a few dates dipped in peanut butter or a small handful of almonds.

Hibachi and Feeling Festive

Merry Christmas Eve Eve! How is everyone’s weekend shaping up?

So, yesterday morning Dana and I geared up for our 6.5 mile run as part of our 10K training plan. Let’s just say my body didn’t quite understand what it was supposed to do with the 9°F weather. Clothing-wise I felt I dressed perfectly, but my muscles and actual body functions weren’t quite up to speed.

My running strides had to be so concise and almost “tight” because of the ice and snow on the sidewalks, and my legs literally felt like bricks moving up the hills. My lungs felt like they had never run before either. It was not the prettiest or most comfortable run for me at all, BUT we did finish and it was great prep for our actual 10K on January 1st.

I ate a big bite of peanut butter post-race to refuel for a short bit while we ran a couple of errands, then it was home for lunch:

In the evening we met up with our dear friends Kate and Luke for a Hibachi dinner at Mount Fuji. They are home from Atlanta for the holidays and I was SO excited to see them!

After dinner we met up with some friends and my brother Jeff (!) and had relaxing and festive evening with them.

Now I am off to cut coupons, go grocery shopping (it’s going to be madness at the store), and get ready for a family Christmas party!

Quick Veggie Packed Meals

Today begins the official start of my Christmas vacation and I’m thrilled of course. How could I not be? I have my whole immediate family coming in to town. That in itself is the best Christmas present on earth. I am so anxious to see everyone and to celebrate this very special holiday with the ones I love so dear.

A look ahead:

  • Tonight: Holiday party with friends
  • Tomorrow: Christmas party with family
  • Monday: Wrapping gifts at a local hospital and then heading to my parent’s house for gifts, dinner, and 10 pm church service.
  • Tuesday: A Christmas run in the morning followed by celebrating Christmas at Dana’s parent’s house

There is so much fun to be had and so much celebrating to be done and I.CAN’T.WAIT.

With all of the celebrating and festivities, I find it challenging (to say the least), to stay on top of my 5-9 servings of fruits and veggies a day. I decided it might be a good idea to put together a little recipe round-up of some quick and veggie-loaded meals to help keep me motivated throughout these next few days.

  1. Pear Salad: mixed dark greens, pears, walnuts, dried cranberries, feta cheese, turkey bacon with poppy-seed dressing

5. Cook yourself up a Morningstar Veggie Patty and top it on a big ol’ pile of greens.

I find it easiest to get a big serving of veggies in when I make a salad which is why most of the meals I just showed you involve just that. Besides getting an incredible amount of the nutritionally dense veggies, salads are just SO quick which is always a plus if you ask me.

Throughout this holiday season I will do my best to hold true to my fruit and veggie intentions: 5-9 servings a day. Who’s with me?

Alright, I’ve had my morning cup of coffee and my pre-run breakfast, now it’s time to gear up for a frigid 6.5 mile run outside with the hubby. The official temperature outside right now is………9ºF. This will be perfect prep for the actual run on January 1st because the weather will most likely be similar to today’s. This will be fun. Unfortunately we will have to leave the pooch at home. He has an ear infection and it was advised he chill out for a few days.
