Hearty Lentils with Spinach
- 1 small onion, diced
- 1 cup carrots, chopped
- 1½ cups lentils
- ¾ tsp. garlic powder
- ½ tsp. ginger powder
- ¾ tsp. cumin
- ½ tsp. curry
- ¼ tsp. paprika
- 1 Tbsp. brown sugar
- 3 cups reduced sodium chicken broth*
- 3 cups spinach
- *Use vegetable broth if cooking vegetarian
- In a medium saucepan, saute onions and carrots on stovetop for 3 minutes.
- Add in spices and stir.
- Add in chicken broth, stir, reduce heat to simmer, cover and let simmer for 2 hours; stirring occasionally.
- Before serving, add spinach and stir in until it wilts into lentils.
- Serve hot.
