It’s been a while since I’ve caught you all up on what I have been eating lately. I will warn you that my eats have been completely random. I have been veering away from the cold salads more often in place of something warm like soup or quesadillas.

Gluten-free pasta with mom’s spaghetti sauce. NUM!
Cheese quesadillas with salsa.
Organic tomato soup with extra cracked black pepper.
Homemade veggie dip made from cottage cheese, ranch seasoning, and Italian seasoning packets–the Ninja Ultima was perfect for this job!
Veggie plate with veggie dip.
Grass-fed beef burger with Monterey jack cheese.
Acorn squash with turkey bacon.
Oatmeal for National Oatmeal Day!

Love the idea to make homemade veggie dip in your Ninja Blender – I need to try that!
Lately I’ve been eating homemade chili, tabbouleh and hummus with pita from a Lebanese restaurant, and tofu stir fries!

Oh my gosh I LOVE Lebanese food. Hummus, tabbouleh, baba ghanoush, falafel…I want it all.
Yum, I’ve never made homemade veggie dip before, but I’m totally trying that out. I’ve made hummus and that’s super tasty! Lately, I’ve been eating bananas, lots of veggies, oatmeal and pumpkin.

Mom’s spaghetti sauce is always the best, am I right? My grandma makes a pretty awesome sauce too actually. I’m going to have to get them to make me a batch when I am home this weekend!

I love extra black pepper on tomato soup too!!! Yum! And you are so smart with making dip in the blender!! Did the single serve cup do ok? Sometimes with my smoothies it has a hard time getting everything blended…

Yea it worked perfectly because I only wanted to make 16 ounces of dip. I have perfected the art of smoothie making in the single serve, but Dana still struggles with it!
mmm strawberry oat bars sound delish. must make those! it’s probably a blessing in disguise that i can’t get onto Pinterest at work…totally be dangerous.
My Ninja Ultima is supposed to be at my doorstep by the end of this week – I cannot wait to try it out!!
