Frozen Yogurt Cake & Almond Cookies

The snow is coming down here in MN this morning. I can’t say I’m thrilled about it after all, spring begins on Thursday. BUT, I am thinking positively that this is our last snow of the season.

I’m pretty sure Moose is even bummed about the snow and he LOVES snow.

I have a little catching up to do from the past couple of days. On Saturday evening we headed over to my mom and dad’s to celebrate Dana’s birthday. Kev met us there too and the five of us had a Greek feast of a dinner thanks to mom and dad.

They even had Mediterranean-like music playing when we got there. Yes, they’re that cute.

I said I would bring the birthday dessert and Dana had decided he wanted an ice cream cake. He’s talking a homemade creation which really couldn’t be much easier.

At the store I had him pick out what kind of ice cream he wanted and then what cookie. He picked a Moose Track Frozen Yogurt and Oreo Birthday Cake Cookies

How to make ice cream or frozen yogurt cake

Birthday Frozen Yogurt Cake

Ingredients

  • 1 tub of favorite ice cream or frozen yogurt
  • 1 package of favorite cookie (try choosing a cookie that would taste good with the ice cream selection)
  • 1 Tbsp butter, melted

Directions

 

  1. Remove frozen yogurt from freezer.
  2. Line a bread pan with plastic wrap; set aside.
  3. In a food processor combine half of the package or Oreos with 1 1/2 tsp butter. Process until it reaches texture of coarse sand.
  4. Pour crumbs onto bottom of prepared pan and use fingers to press them down into the pan forming the first layer.
  5. Next, scoop all of the frozen yogurt onto the crumb layer; use fingers to pat it down.
  6. In the food processor, add the rest of the Oreos and the remaining butter. Process again, but this time leave it a bit more chunky.
  7. Top the ice cream layer with the last layer of crumbs. Garnish if you like. Place in freezer to set and VOILA you have homemade ice cream cake in about an hour!

 

**If I were to do it again, I would have probably added fun colored sprinkles to the top.

I topped everyone’s cake with some Cool Whip to really add that extra wow factor.

I am still passing on the extra sugars at this point, but everyone else gave this cake rave reviews! It is such a fun cake idea for anyone, because they get to choose exactly what goes into it! I made this other Oreo ice cream cake a while back—feel free to check it out!

After dinner we all just relaxed and chatted, and Abbie could hardly keep her eyes open. She was exhausted from all of the socializing!

Sunday

Happy St. Patty’s Day just one day late! We got real crazy…we slept in until 8:30 and read the paper, cut coupons, went grocery shopping, and get this, we even went to Petco for dog food. Talk about a CRAZY morning! 😉

Sunday mornings are my absolute favorite.

After restocking our fridge I threw myself together a spectacular salad with mixed greens, peas, avocado, chicken, sunflower seeds, olives, olive oil, and a piece of cheese and a Claussen pickle (my favorite pickle) on the side.

We had another family birthday party to celebrate in the afternoon so we got all prettied up and threw on our Get Lucky 7k sweatshirts—mine was from last year and his from this year. How embarrassing if we would have worn the SAME one. 😉

For dinner there were MORE veggies on the menu in the form of Veggie Hash or I like to call it Kitchen Sink Hash. We threw all of the veggies we had into a pan which included zucchini, green bell pepper, onion, broccoli, kale, and black beans. We gave these veggies a good sauté. Then we plated them up with some chopped tomato, avocado, cilantro, cheddar cheese, and topped it off with an over-easy egg.

Once again, this dinner never seizes to please me. It’s always good!

Since I am still watching my sugar intake until I am 100% healed from the UC, I made myself a little treat to help satisfy my slight sweet craving I had last night. I found a recipe off Pinterest for Easy Almond Cookies and were they ever! You can check out the recipe here. The only changes I made were I used honey instead of stevia, and vanilla extract instead of almond. If I HAD almond extract in the house I absolutely would have used that.

These cute little guys turned out well, and best of all they were so easy! Only 5 ingredients. They satisfied my sweet tooth which was what I was hoping for.

I suppose I should get this little lady ready for the day. I’m hoping the roads aren’t too terrible. Chances are they will be fine, it’s the drivers I usually worry about more.

The Specific Carbohydrate Diet (again) & Lobster Madness

Oh boy I have a lot to say today. Grab a seat and let’s get to it!

On Sunday we had a fairly leisurely morning. We woke up, made some scrambled eggs with cheese, looked through the newspaper, cut a couple of coupons, and finally got ready to run to the grocery store.

When we go to Turks and Caicos, we will be staying in a villa and will be cooking the majority of our own meals on our own, so this weekend we spent a lot of time getting food together for our trip. We planned out each meal and snacks, wrote out all of the ingredients that we need for each dish, and then went shopping. I think we now have the majority of our food. Next, I will just need to work on the food prep. I will absolutely be sharing this with all of you once it gets a little bit closer.

Changing gears a bit…

If you have been following me for a while, you know I have been dealing with some ongoing health issues, namely Ulcerative Colitis. I am working towards holistic ways of healing and living, and am SO close to finally being healed. It’s like a loose tooth that’s just about ready to fall out. I feel like I need one last final nudge to really heal my gut.

Therefore, I have decided to follow the Specific Carbohydrate Diet for the next week or so before our trip. I followed the SCD this summer but could only handle it for so long because I drove myself absolutely crazy. I know this will be a more short-lived experiment, and have prepared myself mentally for it.

I will begin with the intro diet for 2-3 days and then after that progress as the plan says.  I will limit myself on raw fruits and veggies for the week, and instead eating primarily cooked veggies and fruits. The plan states that you can be stay on the intro diet for up to a week as needed, until symptoms subside, but since I don’t really have many symptoms I have decided to give the intro only 2-3 days.

It will give my colon time to relax, kick up it’s feet and HEAL. I have a really good feeling that this will be what it takes to finally heal.

You will definitely notice a change in my food intake over the next week.

The SCD involves a lot of food prep, so yesterday afternoon I was in the kitchen efficiently working away.

I made SCD ketchup, hard-boiled eggs, bone broth soup with pureed carrots, cooked carrots, baked chicken, and grape juice gelatin. Farmer’s cheese is also allowed in the intro diet but I was not a fan of it, so I’m leaving it out.

For the soup: I used homemade bone broth and added a bunch of carrots. I covered the pot and let the soup simmer with the carrots for 20 minutes or so, until I was able to pierce through the carrots with a fork. Then I used an immersion blender to puree it all together.

When we were out at Target yesterday doing our grocery shopping, I just so happened to walk by a clearance shelf and notice this little gem of a Christmas ornament.

It’s Moose with a scarf on! Of course I had to buy it. Again, he’s totally unimpressed, but at least he humors me for a photo.

Double Date Night

Last night we got all prettied up to get ready for a date night with Betsy and Matt at Stella’s Fish Cafe.

Stella’s is actually the restaurant Dana and I ate at right before he proposed to me! So each time we are there I can’t help but reminisce. I’m thinking an engagement flashback post is in order….but not today!

Bets and Matt were waiting for us in the same cozy booth Dana and I sat in three years ago on engagement night. What are the chances, right? I had to let everyone know how excited I was about that. 😉

We chit chatted away, sipped on some wine, and got ready for our lobster dinner. On Sunday evenings Stella’s has a special where you can get a whole lobster for $19.99. That’s a pretty good deal if you ask me. ALSO, Bets and Matt had a gift card that they wanted to share with us, so we really got dinner for a steal!

This was my first time ever tackling a whole lobster. Dana had told me about his first experience eating one and explained that the inside of the lobster body is this nasty looking green stuff. Supposedly, it is a delicacy to some and the people of Maine told Dana that about half of people eat it, and half leave it alone.

Well, I wasn’t expecting to see what I saw when I opened up the body of that lobster. I definitely eat with my eyes so as soon as I saw the green goop, I knew there was no way I was touching that body. I handed Mr. Lobster’s body over to the garbage pail. I had to get that image out of my mind in order to enjoy the rest of the lobster.

It was a messy double date but SO much fun! I love those two so incredibly much. Thanks for a great night you guys! xoxo

On the way home I got the idea into Dana’s head that we should stop at Cherry Berry for frozen yogurt. Most of our date nights end this way and I am totally okay with that. Considering I knew I would be starting the SCD the next day, I decided it would sort of be like my Fat Tuesday.

I went fairly easy on my serving size along with my toppings (compared to what I usually do). I went with Chilly Nilly and Cookies and Cream and the added just a few brownie pieces, cookie dough, one mini Reese’s peanut butter cup, one Oreo, one frosted animal cracker, two maraschino cherries (yum), and a cherry gummy. Yes, that’s keeping it minimal for me.

What an amazing day!

I have a big day planned today as well. I better get to it. The treadmill is waiting for me. Dun dun dun…

A Typical Day of Meals & Snacks From My Childhood

Happy Thursday to you all. I hope everyone is having a good week. I’m still fighting to feel well today. I got nearly 9 hours of sleep last night so that will hopefully help me heal faster. Sleep is so powerful.

Yesterday I went into work, fought through the morning but then felt so miserable that I ended up going home in the afternoon. I planted myself on the couch and that is where I stayed all afternoon and evening minus getting up to get food and drink.

I hesitate to even share my eats yesterday because they are not the most appealing or exciting, but I’ll do it anyway.

Breakfast was an old favorite of Parkers Farm peanut butter, banana, cinnamon, and a light drizzle of honey.

Lunch was seasoned bone broth with chicken and carrots, applesauce, and raw carrots.

I spent the afternoon trying to nap which was turned out to be an unsuccessful attempt  (why is it so hard for me to nap?!), watching Food Network, reading, and catching up on blogs. Pretty much I sat on my rear all afternoon and rested.

When dinner rolled around I was very hungry, but had no clue what I wanted. Eventually, with the help of Dana, he made up a plate of roasted broccoli with parmesan with a piece of cooked turkey deli meat with an egg on top. It was very random but it ended up being a nummy combo.

I spent the rest of the evening watching an episode of Glee that I had recorded, Whitney, and Modern Family. I love those shows oh so much.

Switching gears now…

After reading a post from the blog A Dash of Meg, who wrote a post about what a typical day of meals and snacks looked like for her growing up, I thought it would be fun to walk down memory lane as well. Shall we?

A Typical Day of Meals & Snacks From My Childhood

Breakfast

In the morning I would stumble down to the kitchen and pour myself a bowl of cereal with  milk or make a warm bowl of Cream of Wheat. Mom always had the cupboard stocked full of good cereals, but some of my favorites were Cinnamon Life and Honey Nut Cheerios. Num! Many times I would sit next to my mom while she read the paper and crunch away at my bowl.

A bowl of cereal now with no additional protein on the side (besides the small amount of milk on the cereal) definitely wouldn’t tide me over very long any more these days, but cereal does make a great snack or you could pair a bowl of cereal and banana slices with a protein rich egg on the side and call it a more well-rounded meal.

I don’t recall snacking very often between breakfast and lunch, so when lunch time rolled around, I was always very hungry. Sometimes I would buy a juice from the soda machine, but not too often.

Most of the time I preferred to bring a bagged lunch aside from those random days when I chose to have the taco salad bar or italian dunkers. It’s funny how I always seemed to have a tummy ache after eating the white bread and cheese loaded italian dunkers. I have learned so much about my body and health since then!

Mom made my lunch for the longest time which I am so thankful for, and my usual comfy tummy lunch was peanut butter and jelly on whole grain bread, baby carrots, an apple or a banana, and then usually one little treat like a cookie or fruit snacks or pudding.

Snacks

After school I was always ready for a snack. Often I would go over to my aunt’s house (Betsy’s mom and dad) and hang out there for a while. Betsy and I would practice our dance steps, and then we would have a snack. My favorite afternoon snacks at her house were freshly popped popcorn and graham crackers with peanut butter and mini chocolate chips!

At home, my favorite snacks were probably another mini bowl of cereal or pretzels. I was quite the carb loader back then. 🙂

Dinner

Later in the evening I would either go to dance and then come home and eat dinner, or eat dinner and then go to dance. As I got older I had more and more classes. Mom did a great job of having dinner ready for all of us, even though we were all going out the door here and there to practices, classes, study groups, etc. If someone wasn’t home for dinner, mom or dad would always plate up a serving and put it in the fridge for when they got home.

Some of my favorites were taco night, spaghetti, fajitas, and lasagna.

But truly, I loved everything my mom made. I was never a picky eater and still am not to this day!

In the evening on special occasions, mom would whip us up a batch of orange julius which I believe was made with orange juice concentrate, milk, vanilla, and ice. I’m pretty sure that was it but don’t quote me on that.

It was such a tasty treat and I always got so excited about them. I may need to try to recreate that bad boy.

So, there you have it! I was definitely a carb queen. I needed a lot of energy and brain fuel to get me through the activities of the day, and still do of course, I just get it in different forms now.

I remember many “tummy aches” growing up. I wonder if they can be attributed to dairy products and gluten? It is quite possible I guess. I remember having to plug my nose in order to finish my milk. My mom spent a lot of time researching gastrointestinal problems and we tried many different approaches to get me to feel better. At 12 years old I was diagnosed with Ulcerative Colitis.

It’s all very interesting to me. I am learning more and more about myself every day and I continue to be amazed by the human body. It’s a good thing I decided to become a dietitian! Now my mom (who went to school for nutrition as well) and I really have good nutrition conversations.

A Day of Comfy Tummy Snacks and Meals

Well, happy Sunday!! I am happy to report that I am feeling MUCH better today. Yesterday was very restful; I was in need of some quiet relaxing time after having a blast on Friday night.

I felt super motivated in the morning and actually made myself a savory breakfast of eggs with cheese and kale. This doesn’t happen very often where I actually crave savory versus sweet in the morning, but I did line my plate with a handful of cold sweet carrots to “balance” the meal and add a touch of sweetness. I can’t tell you the last time I ate carrots in the morning, but I actually really enjoyed them. Weird things are happening over here. 😉

I had a great appetite first thing in the morning and these eggs did a great job of satisfying my hunger. After I ate in the morning though, my appetite spiraled downward and I did not feel well.

I found my spot on the couch from around 10:00-1:00. I nibbled on a banana and drank water while my body tried to recover. Finally I fell asleep for a short while watching Bridesmaids (love that movie) and when I awoke, I felt 80% better!

This is not Bridesmaids on TV if you didn’t notice. This was after I woke up and was feeling better, so clearly I default to Food Network. And don’t let those weights deceive you, they unfortunately didn’t get touched yesterday.

In the afternoon I was actually able to be slightly productive. I painted the shelves for the laundry room, went to Menards with Dana, shoveled the driveway, cranked out my plank-a-day, and then made some super easy on the belly soup.

I used the bone broth I had made the other day to throw together a quick soup with carrots, onion, garlic, peas, broccoli, and chicken. I seasoned the soup as I went along with salt, pepper, savory seasoning blend, and garlic powder. I topped it with fresh cilantro.

It wasn’t a soup that made me want to go run and scream and tell the whole world about, but it was perfect on my still unsettled tummy.

I did have a few other random snacks throughout the day, but overall it was a pretty low-appetite day for me, and I was listening to my body as best as I could.

After dinner we got to work again on the laundry room. We are now in the process of moving all of our junk stuff into the laundry room where it will be permanently stored. Since our basement is unfinished we have just been storing everything in the living area, but since we would like to work on finishing the living area, we needed to move the junk out of there.

The laundry room is nearly finished. It looks smaller now because we have put so much more stuff in there, but it is definitely cleaner looking and more organized! Photos coming soon!

Just before bed, I whipped together some Paleo-friendly waffle batter so that this morning all we have to do is crank on the waffle iron and cook them up. Dana’s patiently waiting for me as I write right now, so I am going to end this so I can get my breakfast on.

Morning Yoga and Food Art

Morning Yoga

Tuesday morning at 5:50 am my alarm went off and I can’t believe I rolled out of bed with the intention of getting a morning workout in before work. I had plans to either run or get my yoga on. I chose the latter mostly due to a cranky neck from sleeping. I figured yoga may help.

I changed into my gear, rolled out the magic purple carpet, and kept the room slightly dark while completing a half hour yoga on demand.

It has been way too long since I’ve completed a yoga session and oh how I’ve missed it. I love the way it stretches my body, calms my mind, and tests my balance. It makes me feel good and really helped me yesterday morning with the slight neck soreness.

Speaking of soreness, I am incredibly sore from that leg workout on Monday! I surely worked it! I used my foam roller to get things loosened up a bit, but even two days later I’m feelin’ pretty tight.

I finally broke the streak—I had NO peanut butter for breakfast and I can still hardly believe it. On Monday night I put together a bowl of frozen strawberries, FAGE 0% Greek yogurt, honey, a sprinkle of chocolate protein powder, and chia seeds. I gave it a mix and popped it in the fridge overnight. Then in the morning I gave it all a final store and had myself a fruity creamy breakfast bowl.

It was a nice change of pace although I bet you can guess what I had for lunch?!  It definitely involved peanut butter in the form of pb and banana. Ha ha it’s a lost cause. I love the stuff and the protein does such a good job of filling me up and keeping me satisfied.

I found myself on the treadmill once again in the afternoon reading a book. There is something incredibly peaceful about it and I get so caught up in what I’m reading that I don’t realize how much time has passed until I glance at the clock.

Dinner

I sautéed bell peppers and onion in coconut oil then added black beans until they were heated through. I cooked up one over-easy egg and topped it on the sautéed veggies along with a quarter of an avocado, tomato slices, and a little salsa.

I then managed to take a series of photos that some might call art. I’ll name the piece, “The Yolk Progression.” I was really just trying to capture a good photo and find the right angle but the way these photos lined up worked out perfectly.

Total nerd alert I’m fully aware.

I had one of those days yesterday where I was just feeling “off.” I am hoping today feels more “on”. Have a great “ON” day my lovely friends.

Question: Are you a morning exerciser? Evening exerciser? 

I know some people who wake up every morning so darn early to workout and I envy their motivation. It feels incredible to finish a workout before work and energizes me throughout the day, and being able to go directly home after a long day versus the gym puts the icing on the cake. We’ll see if I can continue this streak. 🙂

Quick Veggie Packed Meals

Today begins the official start of my Christmas vacation and I’m thrilled of course. How could I not be? I have my whole immediate family coming in to town. That in itself is the best Christmas present on earth. I am so anxious to see everyone and to celebrate this very special holiday with the ones I love so dear.

A look ahead:

  • Tonight: Holiday party with friends
  • Tomorrow: Christmas party with family
  • Monday: Wrapping gifts at a local hospital and then heading to my parent’s house for gifts, dinner, and 10 pm church service.
  • Tuesday: A Christmas run in the morning followed by celebrating Christmas at Dana’s parent’s house

There is so much fun to be had and so much celebrating to be done and I.CAN’T.WAIT.

With all of the celebrating and festivities, I find it challenging (to say the least), to stay on top of my 5-9 servings of fruits and veggies a day. I decided it might be a good idea to put together a little recipe round-up of some quick and veggie-loaded meals to help keep me motivated throughout these next few days.

I find it easiest to get a big serving of veggies in when I make a salad which is why most of the meals I just showed you involve just that. Besides getting an incredible amount of the nutritionally dense veggies, salads are just SO quick which is always a plus if you ask me.

Throughout this holiday season I will do my best to hold true to my fruit and veggie intentions: 5-9 servings a day. Who’s with me?

Alright, I’ve had my morning cup of coffee and my pre-run breakfast, now it’s time to gear up for a frigid 6.5 mile run outside with the hubby. The official temperature outside right now is………9ÂșF. This will be perfect prep for the actual run on January 1st because the weather will most likely be similar to today’s. This will be fun. Unfortunately we will have to leave the pooch at home. He has an ear infection and it was advised he chill out for a few days.

I Witch You a Happy Halloween

Light up those pumpkins, get your bowl of candy ready for those trick-or-treaters, the day is finally here. Since we already had our Halloween party last weekend, and since we aren’t going to be home for Halloween, I actually feel like the day has come and gone already. But no no. ‘Tis here.

How about some old snapshots from past Halloweens? Shall we?

Halloween 2008: Sheriff and a convict, college style. I made my costume myself by using black duck tape across old white clothes that I never wear. I went to the dollar store and bought plastic handcuffs too. Sheer genius right? 😉

And we were a birthday party princess and a piñata this year. This was one of my all-time favorites. Dana’s costume was NOT easy to make but so worth it!

Halloween 2011: No dressing up this year because I was in my dear friend Angela’s wedding that weekend.

Halloween 2012: As you’ve seen already, we were Ms. Kourtney Kardashian and Mr. Scott Disick this year.

I love getting creative when it comes to Halloween, but it seems like every year when the time rolls around I am always scrambling until the last minute to pull something together. Why is that? Oh yes, such is life.

Anyway…we are off to Colombia! Wooooo! I won’t be blogging while I am away but I do have a couple of posts lined up for ya including a special guest post. Don’t miss me too much! I can’t wait to fill you in when I get back.

There may have been a couple of halloween candies that jumped into my mouth too. Just maybe.

The Return of Oatless Oats

So you know when you have those nights where you just want to eat and eat and eat, and it doesn’t matter how much you stuff your face you still want to keep eating? Well, I had one of those nights last night, (says the dietitian). Hey, I’m only human!

While getting dinner ready, I munched on some unsalted roasted almonds and a few raspberries. This was my appetizer.

For dinner I sautĂ©ed zucchini and green beans (both from our garden), onion (farmer’s market), mushrooms, and a small amount of black beans. I wanted to test out the black beans and see how my body reacted in relation to the U.C. because I have really been missing my beans. The bean verdict: in small amounts I can handle them just fine as long as they are very well cooked and soft.

I sprinkled the veggie sauté with garlic powder, cumin, chili powder, and salt and pepper. Two minutes before the veggies were done, I got to work cooking up an over-easy egg.

Once the egg was done, I plated up my veggies, next went the egg, fresh tomatoes (from the garden too), cilantro, and Wild Harvest’s mango salsa.

After dinner, I then made myself a big bite of PB2 with honey, followed by a couple of pieces of chocolate. I wanted more but was realizing that I didn’t need more, so I walked away. I turned Wheel of Fortune on, grabbed a couple of hand weights, and started walking in place while working the arms. This took my mind off of food and finally my body realized I didn’t need a-n-y-m-o-r-e. Reminder to myself: mindful eating.

Lunch

I jumped ahead here, so let us back-pedal it now. I am very proud of my lunch today. It was seriously awesome.

I made a Greek-inspired chicken salad which included:

  • pulled chicken breast
  • zucchini
  • grape tomatoes
  • green olives
  • feta cheese
  • balsamic basil dressing

I loved this flavor combo so much that I made if for my lunch again today. I also had a banana, clementine, and believe it or not some cooked carrots. 😉 Cooked carrots every day keeps the doctor away? Not in my case I guess, but maybe!?

Now to breakfast.

It has been a long time since I made this one: oatless oatmeal. In the mix: 1/4 cup egg whites, 1/2 banana, somewhere between 1/4 and a 1/2 cup of almond milk, and a sprinkle of cinnamon.

Blend all ingredients together. Pour onto non-stick pan and cook over medium heat. Use spatula to stir and mix while the mixture begins to bubble and thicken. This process only takes about 3 minutes, so keep an eye on it and keep stirring.

The mixture will have a runny oatmeal like consistency when done. Pour into your bowl, top with a drizzle of honey if you wish, and a spoonful of peanut butter. This was such a nice change of pace, AND it’s SCD friendly too! It’s the return of the oatless oats. I hope to remember this one more often.

I did make it to the gym yesterday. I headed straight there after work because I knew if I came home first, I would never make it there. I warmed up with a mile run on the treadmill then made my way to the weights to workout my back and biceps. I also did some core work.

Turning Into a Carrot

Happy Thursday!

So, this post is ALL over the board. I missed a day of blogging so I’m going to try to catch you up on anything I feel is important enough to share.

First of all, this arrived on our doorstep yesterday. My very own food dehydrator. No more spending mega dollars on dried fruit and veggie chips at the store, I’m making my own. You better believe there won’t be any preservatives or added sugars in my dried goods. I can’t wait to get this up and running. I am particularly excited to try to make veggie chips. They will be a great crispy snack, or at least I am hoping they will be.

For dinner Tuesday night I made myself an egg scramble with 1 egg, 1 (or 2?) egg whites, cheddar cheese, and diced avocado. I topped it with Wild Harvest’s Mango Salsa and had a tasty meal in no time. I also ate cooked carrots–I think I am officially turning into a carrot the way I have been eating those bad boys lately.

Wednesday Breakfast

I started my day off yesterday with a cup of coffee and a bowl of cinnamon and honey yogurt.

I was at a conference for work all day and since lunch wasn’t provided, I brought my own of course. I packed cooked carrots, and a banana pancake with almond butter. I also brought an extra banana in case I needed something else, but it turned out that I didn’t eat the banana but should have eaten it, because by 5:00 I was not feeling so hot. I know that if I go too long without eating I tend to bloat, but the conference setting we are in doesn’t make snacking very easy. First of all food and drink are technically “not allowed” in the auditorium we are in, so if I did want a snack I would have to have one outside of the auditorium, and second, it’s so cramped in the stadium seats, that reaching into your bag to dig out a snack makes for quite the tricky task.

 

I don’t want to deal with the bloating again today though, and since I am at the conference again, I’m going to do my best to have snacks in between meals to help tame my gut.

During lunch break, my co-workers and I set out for a walk. It was incredibly humid and hot here yesterday, so we walked at more of a leisurely pace than we normally would. It felt great to stretch the legs for a while after being cramped so long.

After the conference, I had plans to meet up with my girlfriends, so I packed myself a little snacky dinner: cheddar cheese, a hard-boiled egg, more carrots, and honeydew melon.

I headed over to my friend Julie’s house along with my friends Kate and Amanda. We caught up, laughed a lot, watched SYTYCD and completely enjoyed eachother’s company. I love all of those girls so much. Girlfriends are so amazing. Oh, and I cannot forget to mention we also hung out with her two adorable Maltese pups, Ava and Bella. Seriously the cutest little furballs.
This old lady (moi) had to leave the party at 8:30 to get home and pack her lunch for today so she could make sure to hit the hay by 10:00 pm. I need a lot of sleep these days.

Food Prep Sunday

Well, I still can’t believe the weekend is over. It was a good one as they always are. Saturday was spent celebrating Kari and Tony’s wedding and relaxing in the evening.

And Sunday…

We slept in until 8:30 which felt amazing. It was so nice to have a relaxing morning and not have to rush to get up, or set the alarm. Once I rolled out of bed, I got to work on a fruit smoothie.

In the mix:

  • Strawberries
  • Blueberries
  • Banana
  • Spinach
  • Yogurt
  • Sweetener
  • Splash of water (to get things moving)

I also had a cup of hazelnut coffee. I drank my liquid breakfast while flipping through the Sunday paper and cutting coupons.

After a leisurely morning, we got out and ran our standard Sunday errands. We made a trip to the co-op for freshly ground peanut butter (we priced it out and it was cheaper to buy it this way than make our own), then we went to Target, and lastly Costco. By the time we got home at 12:30 I was about to eat my hair. Our fridge was fully stocked.

I whipped up a batch of scrambled eggs seasoned with salt and pepper. I wanted to try incorporating some Dry Curd Cottage Cheese (SCD talks about this stuff all the time). It took me 2 weeks to find this cheese–I thought I had the right kind during the intro diet, but turns out I bought the wrong stuff. Anyway, I mixed in a spoonful of DCCC into the eggs with high hopes of a cheesy nummy egg, but it turned out to be a flop. It tasted like cottage cheese mixed with eggs (duh) and I should have known that it would come out that way. I guess I thought the cheese would sort of melt into the eggs a little better. The texture was a little too funky for me. I topped it with salsa which made it taste a little better, and I choked down a couple of bites before moving on to something else.

After my failed DCCC eggs, I went on to eat cooked carrots, watermelon, and almond butter. Then, I hit the road to go meet mom for a hot and humid walk. We walked around mom and dad’s neighborhood for about a half hour and we looked like wet noodles by the time we got back because of the humidity. It was a great walk though! After the walk I hung out with mom, dad, and Abbie before coming home to get to work in the kitchen.

I think Sunday can officially be deemed food prep day. Lately, it has been working out well to spend a few hours on Sundays preparing food for the SCD so that I am able to continue to stay on track throughout the week. It can be slightly exhausting but it’s always worth it in the end.

Yesterday I made…

  • Cooked carrots
  • Applesauce
  • Cheesecake (SCD)
  • Crockpot Chicken
  • Tilapia
  • Hard boiled eggs
  • Pineapple gelatin
  • Homemade BBQ sauce (recipe to come)
  • And I cut up fresh strawberries from a Costco-sized container

Cooked carrots: place organic baby carrots in a large bowl with about a cup of water, cover and microwave for 8-10 minutes or until carrots are fork tender. I have been eating these like crazy and wanted to have plenty for the week ahead.

Applesauce: Peel, core, and slice your apples. Place in pot with an inch or two of water in bottom of pot. Bring to a boil and let boil for about 10 minutes or until apples are fork tender.

Let the apples cool slightly, then transfer the apples (not the water) to a food processor or blender and blend until smooth.

Refrigerate and enjoy plain or with cinnamon. That’s what you call all natural applesauce!

Next up was SCD cheesecake and I used this cheesecake recipe right from the book.

Crock pot chicken: I placed two boneless skinless chicken breasts into the crock pot with ground mustard, salt, pepper, and a touch of honey. I set the crock to low and let it go for 4-5 hours. Once the time was up, I removed the chicken and placed into my Pyrex so that it would be ready to eat for lunch or dinner this week.

For dinner, we cooked up tilapia seasoned with fresh dill from our garden, fresh lemon juice, and pepper. I ate mine with ketchup (obviously), and I had a side of cooked carrots with a sprinkle of cinnamon and honey.

I LOVED the carrots with the cinnamon and honey holy cow. They tasted like a dessert to me! I finished the meal off with a piece of cheesecake pictured above. Hmm…well, it tasted better than the last time I made it but that’s because I had used the completely wrong cheese! The taste was alright, but I had a hard time getting past the texture. It wasn’t smooth like I was hoping. Oh well, I can’t say I didn’t try, but probably won’t be attempting to make that again.

There you have it; my busy day in the kitchen. The next couple of days I am going to be cooling it with introducing new foods into my diet. My body has been a little off lately and I this past weekend I wasn’t feeling too well. I plan to eat a modified version of the intro diet for a couple of days to get me back on track.

This is what I’m tentatively planning to eat (I am basing these foods off of the SCD Intro Diet and modifying to fit my needs):

  • Eggs
  • Chicken
  • Lean beef (if necessary)
  • Fish
  • Fruit Juice Gelatin
  • Cooked carrots
  • Applesauce
  • Bananas

Basically, I’m just adding applesauce and bananas on to the intro diet. Since I have already improved tremendously, I know I will be able to handle both of those foods just fine yet still give my system a bit of a break. This will only be for 1 or 2 days, then I should be able to move on again with adding foods back in slowly. That’s the plan as of now.

Once I was all done with the food prep, the rest of my Sunday night was spent watching the Season Finale of The Bachelorette. I am pretty surprised with the outcome. Have a great day everybody! I’ll catch up with you soon.
