Cheesy Broccoli Soup and BBQ Chicken

Happpppy hump day to all!

I’ve got a few food pics to share with you on this Wednesday for my rendition of WIAW….What I’ve Been Eating Lately.

First off, gluten-free spaghetti with meat sauce. I tossed in some kale, spinach, onions, and ground beef into the spaghetti sauce. And of course, I had to top the whole thing off with parmesan. I love this meal.

Lunch in New York: A burger. Go figure. My body really craves the iron from the red meat. Although my gut hasn’t been appreciating the greasy food.

A side of super amazing brussels sprouts to try to “balance” my meal. These were so incredible. I’m guessing they were roasted in olive oil and seasoned simply with salt and pepper but if that’s all it is, then why can’t I make them this good at home?

I was so absorbed in the events of the wedding that I neglected to take a single food photo. There was A LOT of food and a lot of GOOD food! Take my word.

Saturday morning I was wiped. This girl just can’t stay up until midnight like she used to in the old days. Room service was a must. Oatmeal for me, with a side of fruit.

Back at the ranch home, I tried getting back on the healthy food train after my 29 hours away with a big ol’ green salad. Unfortunately I had to do everything in my power to get this down. Like I mentioned, these days sometimes nothing sounds or tastes good!

On Monday I made Peas and Crayon’s Broccoli Cheese Soup. Coincidentally, she is the one who hosts the WIAW link up!

This soup was pretty darn tasty if you ask me. I learned my lesson though to make sure and measure seasonings such as cayenne in a soup, because apparently my “eye-balling” it method made for a soup with a bit of a kick! I had to add extra broth and half and half to try to tame it down.

I really enjoyed it though.

Last night I made a cranberry BBQ chicken (recipe to come soon). I melted monterey jack over the chicken and served it alongside a baked potato and green beans. After eating almost this entire plate of food, I remembered why I really shouldn’t eat big meals anymore. I just felt nasty. Smaller meals is the way I need to go these days. It’s just tough to do with work!

I’ve been a cereal eating machine lately. My latest grocery grab was Honey Nut Chex.

And lots of blueberries have been consumed in the last week as well.

EAT! Getting Summer-y Around Here.

If you’re hungry, I apologize in advance because this post is going to make you even more hungry. There have been some serious delicious eats happening around here lately and it’s about time I caught you up on some of them.

No need to get too wordy. Let me show you what I’ve been eating lately!

Tilapia, dirty rice, and broccoli made by mi madre, so obviously it just tastes better!

Grilled veggie burgers in a gluten-free tortilla, a lazy attempt at coleslaw, and baked beans. It’s feeling summery around here and you can tell by my meals!

An absolutely amazing breakfast! French toast gluten-free waffle with peanut butter and syrup. YES!!

Steak kabobs and grilled french fries. Summer, summer, summer!!!

Panera’s poppyseed salad. You know the temperatures are warming up when Panera gets this on their menu. It is a must for me to get at least once a summer.

Apple with peanut butter. There may have been a couple of mini chocolate chips added to this snack.

GF waffle with pepper jack cheese, mustard and a fried egg. Probably my favorite quick go-to these days. It’s easy, fast, it’s salty and spicy and packs some nice protein with the egg and the cheese!

Some Good Eats: BBQ Beef, Tacos, Tilapia

This post was meant to go up yesterday but sleep trumped the blog, SO here you get it today!

Even though I’m a day late with this, I’m still going to link up with Jenn’s WIAW. This of course is my version of WIAW, called What I’ve Been Eating Lately. This is an overview of some of my eats over the last week or so.

Let’s get started.

We celebrated Dana’s birthday with his parents and had one of my all-time favorite meals. Tacos. Ever since I was a little girl, when my mom would always ask me what I wanted for my birthday meal, I’d say 90% of the time my response would be tacos. Although it wasn’t my birthday this time around, Dana chose very wisely.

Before tacos though we noshed on some appetizers…

And then came the tacos…

So good! I was disappointed in myself for loading up on so many crackers and cheese. I wasn’t able to enjoy too much of the tacos before being completely stuffed.

I prepared a semi-homemade meal made witg Annie’s gluten-free mac n’ cheese, sautéed broccoli, peas, salt and pepper, and one chicken, apple, and gouda sausage.

Fairlife, a lactose-free, protein-rich milk company, sent me some samples of chocolate milk, 2% milk, and skim milk. They also sent their core power protein drinks which I told them I would give to Dana and my brother to use as post-long run refuel.

I wasn’t actually planning on drinking the milk (I was going to give it all to Dana), but once I tried the chocolate milk, my plans changed. I couldn’t get enough of this stuff! Just like any chocolate milk, you still have to be careful with the sugar content, but I enjoy a half a cup here and there and it’s a great treat!

A quick and simple lunch: black bean and cheese quesadilla with salsa and avocado. Is that not a perfect bite taken out of there? Didn’t even try. 😉

Dinner at mom and dads: tilapia, red beans and rice, and asparagus. I always forget how much I enjoy tilapia until my mom makes it for me. Then I remember. Num.

Eggs with spinach, mushrooms, red bell pepper, cheese, avocado and salsa. On the side, a super old hard (from the freezer) Udi’s gluten-free bun with jam. At least the eggs were good.

And another Pinterest win. BBQ pulled beef with coleslaw courtesy of MyBakingAddiction.com. I followed the beef recipe to a T but not the coleslaw.

A Clean Attempt at WIAW

It’s Wednesday! We are halfway through the week my friends.

Let’s get right to it and talk about some of my amazing eats from this week.

A week ago, I decided to drop refined sugars for a while. I know how much inflammation refined sugar causes to my body, and I wanted to give my body a rest from that madness. Check out this post about how I kick the sugar addiction. I still enjoy sweets but in the form of fruit and natural sugars like organic honey.

Besides the sugar thing, I have really cleaned up my diet again. I’m limiting my processed food intake, going crazy on the fruits and veggies, becoming more aware of my protein intake, and overall just trying to keep my food intake very balanced. It’s amazing what even a week of good clean eating can do for a person! I am feeling great and less bloated.

My EATS:

Those banana almond bars that I made for Valentine’s day are already gone! They were definitely enjoyed if you cannot tell. This is why I can’t keep any type of sweet in the house! At least they were healthier than a pan of Special K bars (oh how I love Special K bars–-Katie).

This random stir-fry I threw together last night turned out AMAZING! It was sautéed onions, red bell pepper, and mushrooms with a cooked veggie burger and quinoa thrown in the mix. I topped the dish with hummus and was one happy girl.

This salad that looked a lot prettier than it tasted. You win some, you lose some. I couldn’t figure out why it didn’t taste good because I’ve made a nearly identical salad before and absolutely loved it. I guess I wasn’t in the right mood.

I went through three napkins and really did a number on this dinner. So good!

Homemade almond crackers. I made two different kinds: salt and pepper and rosemary and garlic. They both turned out great!

As always, smoothies are still my go-to breakfast choice. I’ve been going through quite a few brown rice tortilla and peanut (or almond) butter wraps. Organic raw carrots. Cashews. Raisins. Dates.

Weekly Eats: Fruit and Veggie Love

Happy Hump Day!

I’m getting in on the WIAW action today and am linking up with Jenn! As always, I am recapping some of my eats from the whole week and looking back, I packed in lotsa fruits and veggies. Love it!

This colorful salad: mixed dark greens, broccoli, zucchini, pinto beans, shredded cheddar, red bell pepper, sliced almonds, and cottage cheese. SO GOOD! One of the best salads I’ve made in a while.

Red, yellow, and orange bell peppers have been my go-to veggie this week. They are so crunchy and sweet and amazing.

Banana and peanut butter wrap in a brown rice tortilla with a sprinkle of cinnamon and drizzle of honey. Always a winner.

My contribution to a work potluck: turkey bacon wrapped pineapple with a sprinkle of brown sugar on top!

My potluck plate: roasted red pepper soup, pb and j, tuna noodle salad, red velvet cookie, and strawberries. We had a Valentine’s red and pink themed potluck! So many delicious treats. We don’t mess around with food at our work meetings.

The sugar intake has gotten out of hand once again so I am planning to stay clear of refined sugar for two weeks starting now!
